Add chopped spinach, cucumbers, strawberries, chives, and toasted walnuts to a large bowl. Add a pinch of salt over the salad and toss together.
In a small mason jar, add olive oil, vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Cover and shake until combined. Give the dressing a taste and adjust vinegrette, if needed. Add to salad and toss together.
As a side, this salad feeds four small plates. As an entree, this salad is enough for 1. Add on some protein to make it a meal!
