Apple Pie Sundae
High Road Cinnamon Crumble Ice Cream is topped with caramelized cinnamon apples, pie crust chips, and caramel sauce to make for a fun way to eat your favorite pie!

Servings: 4 sundaes
To assemble sundaes:
- 2 pints High Road Cinnamon Crumble Ice Cream
- caramelized cinnamon apples (recipe below)
- cinnamon sugar pie crust chips (recipe below)
- 1/4 cup caramel sauce
- whipped cream for topping sundaes
- cinnamon for dusting on top
For caramelized cinnamon apples:
- 2 large granny smith apples
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon cornstarch
- 1/4 cup water
For the pie crust chips:
- 1 round sheet pie crust dough unbaked
- 1 large egg
- 1 tablespoons butter salted, melted
- 3 tablespoons sugar
- 1 tablespoon cinnamon
To make the apples:
Peel and dice apples into even pieces. Place a cast-iron skillet over medium heat and add butter. Once butter has melted, add apples and cook for 5 minutes. Add brown sugar and spices and stir to combine.
Stir cornstarch and water together in a measuring cup. Pour over apple mixture in skillet. Stir to combine. Cook for another 3-4 minutes, or until mixture has thickened and turned gooey. Remove from heat.
To make the pie chips:
Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper. Roll out dough sheet onto prepared baking sheet. Brush dough with egg wash (made with 1 large egg and 1 teaspoon of water). Slice dough into strips and separate them about an inch apart.
Bake dough strips in preheated oven for 14-16 minutes or until golden brown on top. Remove from oven. Brush tops with melted butter. Combine sugar and cinnamon together and sprinkle over melted butter. Set aside to let pie crust cool and let butter set.
Once cooled, break pie crust into pieces. Now they're ready to use in the sundae!
To assemble sundaes:
Scoop ice cream into dish (no more than 1 cup). Add caramelized cinnamon apples, a sprinkle of pie crust chips, and a few drizzles of caramel sauce. Finish with whipped cream and a dash of cinnamon. Makes 4 sundaes.
