Cilantro Lime Sweet Potato Fries
Sweet potatoes are tossed in garlic, lime zest, and olive oil, baked to perfection, and finished with a sprinkle of fresh chopped cilantro.

- 2 large sweet potatoes
- 3 tablespoons lime zest (from 2 limes)
- 4 cloves garlic minced
- 4 tablespoons olive oil
- 1 tablespoon flour
- sea salt to taste
- 1/4 cup chopped cilantro
Preheat oven to 425 degrees. Prepare baking sheet by spraying with nonstick spray. Set aside.
Slice sweet potatoes into sticks. Add to a large ziplock bag with lime zest, garlic, olive oil, and flour. Close bag and shake to evenly coat the sweet potatoes with the ingredients.
Empty sweet potatoes only large greased baking sheet. Bake for 20 minutes. Remove from oven, toss fries to move them around, and bake another 20 minutes.
Remove from oven and sprinkle with sea salt and chopped cilantro. Finish with a few squeezes of fresh lime juice. Serve immediately with ranch dipping sauce.
