Cilantro Lime Rice (Chipotle Copycat)
You can finally make the addicting rice from Chipotle right in your own kitchen! And it's only 4 main ingredients!

Servings: 8 servings (1/2 cup each)
- 2 tablespoons butter (or margarine)
- 2 cups basmati rice uncooked
- 3 1/2 cups water (check directions on rice to use what they recommend)
- 1/2 teaspoon salt
- 1/4 cup cilantro fresh (measure before chopping)
- 2 - 3 tablespoons lime juice fresh (about 2 limes)
Rinse the rice in a strainer to remove the extra starch. If you like starchy, sticky rice (like I do!), skip this step.
In a medium/large saucepan, add rice*, water*, butter, and 1 tablespoon of lime juice. Bring to a boil and then reduce heat to low and simmer until all the water is evaporated and rice is cooked.
When rice is cooked, remove from heat and add cilantro. Add the remaining 1 tablespoon of lime juice. If you want more lime flavor (like I do!), add another few splashes, to taste.
*If you are using a rice cooker, make sure to use the measurements directed in the manufacturers instructions. They are typically different from cooking rice on a stovetop.
