First, make the caramelized bananas. Add butter to a skillet and set heat to medium. Once the butter is melted, add brown sugar and maple syrup. Stir to combine and continue cooking until mixture is smooth (about 3 minutes).
Add bananas to sugar mixture and cook for another minute. Remove from heat. Set aside while we prepare the rest of the sundae.
Next, it's time to warm the banana bread. Heat a skillet over medium heat. Add a tablespoon of butter. Slice the banana loaf into 6 even slices. Place 4 slices into skillet and toast for about 1-2 minutes or until the bread has turned golden brown on the edges. Flip and cook for 1-2 more minutes. Remove and repeat with the last 2 slices.
Place 1 slice of banana bread on a small plate. Scoop 2 small scoops of butter pecan ice cream over the top of the banana bread. Cover with about 1/4 cup of caramelized bananas. Repeat with 5 remaining slices of banana bread. Serve immediately.
