Banana Bread Sundae

Ingredients

For assembly of the sundae:

  • 1 quart butter pecan ice cream
  • caramelized bananas (see recipe below)
  • 1 9x5 loaf banana bread
  • 1 tablespoon butter
  • pecans for garnish

For the caramelized bananas:

  • 6 tablespoons butter salted
  • 3 large bananas sliced
  • ¾ cup light brown sugar
  • 2 tablespoons maple syrup

Instructions

  • First, make the caramelized bananas. Add butter to a skillet and set heat to medium. Once the butter is melted, add brown sugar and maple syrup. Stir to combine and continue cooking until mixture is smooth (about 3 minutes).
  • Add bananas to sugar mixture and cook for another minute. Remove from heat. Set aside while we prepare the rest of the sundae.
  • Next, it's time to warm the banana bread. Heat a skillet over medium heat. Add a tablespoon of butter. Slice the banana loaf into 6 even slices. Place 4 slices into skillet and toast for about 1-2 minutes or until the bread has turned golden brown on the edges. Flip and cook for 1-2 more minutes. Remove and repeat with the last 2 slices.
  • Place 1 slice of banana bread on a small plate. Scoop 2 small scoops of butter pecan ice cream over the top of the banana bread. Cover with about 1/4 cup of caramelized bananas. Repeat with 5 remaining slices of banana bread. Serve immediately.
