Georgia Peach Salad

Servings: 1 entree salads
For the white balsamic vinaigrette:
- 3 tablespoons white balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 4 tablespoons canola oil
- 1 tablespoon Dijon mustard
- 1 clove garlic minced
- 1/4 teaspoon salt
- 1 pinch ground pepper
For the salad:
- 3 cups mixed greens
- 1 grilled chicken breast
- 1 small peach
- 2 tablespoons pecan halves toasted
- ⅛ medium red onion thinly sliced
- 2 tablespoons crumbled goat cheese
- 6 grape tomatoes
- salt and pepper to taste
- 2 tablespoons homemade white balsamic vinaigrette see recipe above
For the white balsamic vinaigrette:
To assemble the salad:
Add lettuce to large plate or bowl. Slice grilled chicken and lay in the center of the salad. Halve and slice one half of the peach and lay over the top of the salad. Save the other half for another use.
Top salad with sliced onion, toasted pecans, goat cheese, and grape tomatoes. Sprinkle salad with salt and pepper. Toss salad with a couple tablespoons with dressing. Eat immediately.
