Orange Vanilla Scones

Ingredients

For the scones:

  • 3 cups plus 2 tablespoons all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 2 teaspoons grated orange peel
  • 1 teaspoon salt
  • 10 tablespoons butter chilled, unsalted
  • 1 large egg
  • 2 tablespoons fresh orange juice
  • 1/3 cup milk
  • 1 teaspoon vanilla bean paste

For the icing:

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • ¼ teaspoon grated orange peel

Instructions

For the scones:

  • Preheat oven to 375 degrees. Prepare a baking sheet with parchment paper or a silicone baking mat. Set aside. 
  • Add flour, sugar, orange peel, and salt to a large bowl and whisk together to combine. Cube the butter and add to the flour mixture. Using your hands, cut the butter into the flour until the butter is the size of crumbs. 
  • In a small bowl, whisk egg, orange juice, milk, and vanilla bean paste together. Make a well in the flour-butter mixture. Add liquid ingredients. Fold the flour-butter mixture into the center to mix in the liquid ingredients. Gently mix together until ball of dough forms. 
  • Turn ball of dough onto floured surface. Using a rolling pin, roll dough into an 8-inch square. Cut square into 4 smaller squares. Cut each square into 2 even triangles. You should have 8 triangles. Cut each triangle into 2 halves. You should have 16 even triangles.
  • Transfer triangles to prepared baking sheet, leaving about 2 inches in-between each scone. Bake in preheated oven until toothpick comes out clean when inserted, about 16-18 minutes. 
  • Remove scones from oven and let cool. Once completely cooled, dip tops of scones into icing and let the icing harden before serving. 

For the icing:

  • Put powdered sugar in a medium bowl. Add orange juice, orange peel, and heavy cream and whisk together until smooth.
