Wild Rice Salad – Hearty wild rice is tossed in a tangy vinaigrette with dried cranberries, sliced almonds, corn, and red onion to make for a delicious salad that will completely shock you

Some of my favorite recipes to share are my recreations of meals I’ve loved from restaurants. My latest obsession was a side dish that I ordered on a whim because I wanted something refreshing. It’s the Wild Rice Salad from Houston’s Restaurant. From the first bite, I was in love. I was immediately shocked by the punch of flavor from the vinaigrette. I love a great, simple vinaigrette. It really can take a dish from “bleh” to “pow!”

In honor of the spring season, I thought I’d share this dish that is both bright in color and flavor. It’s super simple to make and can be made at the beginning of the week and enjoyed little by little each day. Or make it for a BBQ as an alternative to the potato or macaroni salads you’ve been enjoying over the years.

Without further ado, here is my Wild Rice Salad!

How to make this salad

This salad is just as simple as any other salad you’ve made. The most time consuming part is cooking the rice. Wild rice is super hearty so the grain takes some time to cook, about 40 minutes. This is a lot longer than traditional white rice, which takes about 20 minutes.

Once the rice is cooked, it’s added to the homemade vinaigrette, along with dried cranberries, corn, sliced almonds, red onion, and fresh parsley. Combine them all together and the salad is done! Simple as that!

Tips & Tricks

  1. This recipe calls for a wild rice blend, which is wild rice plus some brown rice. If you cannot find a wild rice blend in stores, simply use 1/2 cup of wild rice and 1/2 cup of brown rice. You pay have to cook them separately if the cooking instructions are different.
  2. Wild rice takes a long time to cook so make sure you give yourself enough time to cook the rice and to let it cool to room temperature before assembling the salad.
  3. When cooking the rice, do not add seasoning. The dressing used in the salad has seasoning so you don’t want to risk over seasoning it. It’s always better to under season and add more salt than over season and not be able to fix it.

I see that most of your dishes are mixed with a lot of vegetables Block Blast Unblocked from greens, carrots, potatoes and nutritious seeds. You tend to find dishes that limit animal protein instead of using as much as before.

This is nice to have some other ideas to use rice in. We have rice with pork or mixed with some quinoa.

Yum this is a perfect dish for a meatless Monday, which we try to do every week over here at our place. While we are not vegan or vegetarian we fall into a Pecastarian relm and the meatless options help to keep us on track, can’t wait to try this one!

Some of my favorite memories start with the smell Some of my favorite memories start with the smell of coffee swirling through a chilly morning. This Pumpkin Cream Cold Brew was born from one of those mornings, when I had leftover pumpkin cream and too much cold brew not to pair them together.

This isn’t just a seasonal drink, it’s that edgy, cozy twist you crave when autumn meets caffeine: chilled cold brew topped with airy pumpkin-spiced cream that slowly melts in and mingles with every sip. It’s smooth, spiced, and addictive in the best way.

Would you take yours extra creamy or light and dreamy?

I’ll never forget the first time I bit into a ca I’ll never forget the first time I bit into a cake that tasted like summer itself: the sun-warmed sweetness of strawberries, carried into every crumb. That memory stayed with me until I decided to capture it in cake form.

This Roasted Strawberry Bundt Cake starts with macerating strawberries so their juices deepen, roasting them to intensify flavor, then folding them into a tender, buttery bundt cake that’s bursting with berry brightness. Every slice is soft, moist, and dotted with those roasted ruby surprises.

The first time I tasted chocolate raspberry mousse The first time I tasted chocolate raspberry mousse, I was at a small café on a rainy afternoon overseas. A spoonful felt like velvet, silky chocolate dancing with tart raspberry, so light it dissolved in your mouth. That memory haunted me until I made it myself.

This Chocolate Raspberry Mousse is my tribute to that moment. Rich dark chocolate, whipped light as air, with a swirl of bright raspberries cutting through the sweetness. Elegant, indulgent, yet surprisingly approachable.

It’s the kind of dessert that feels special, but doesn’t require hours or dozens of ingredients. Sometimes, the most unforgettable dishes are the simplest.

Would you dig into it plain or top it with fresh raspberries & whipped cream?

It all started on a cozy fall evening. I was cravi It all started on a cozy fall evening. I was craving pie + cheesecake, and I couldn’t decide which to make. So I thought: Why not both?

That’s how these Chocolate Pecan Pie Cheesecake Bars came to be. A buttery pecan pie layer rich with toasted pecans and deep caramel, sandwiched over creamy cheesecake, drizzled with chocolate, all baked into a bar you can slice and serve.

Every bite hits: the nutty crunch, the silky cheesecake center, the chocolate swirl that ties it all together. It’s indulgence without the fuss of flipping pies or cutting perfect slices.

One rainy Saturday morning, I found myself craving One rainy Saturday morning, I found myself craving something savory, warm, and a little comforting. I rummaged through my fridge, spotted leftover ham, and remembered a quiche I’d always meant to try.

So I rolled up my sleeves, caramelized onions until golden, whisked eggs and cream, and folded in those ham cubes, and that’s how these Mini Ham & Cheese Quiches with Caramelized Onions were born.

Now, these bite-sized savory pastries are my favorite brunch hack. Flaky crust, sweet onion richness, melty cheese, and just the right amount of ham in every bite. They feel fancy but are totally doable anytime.
