Grilled Peach Sundaes – Fresh peaches are grilled and served with cinnamon butter, vanilla bean ice cream, and homemade cinnamon granola

I told you I’d be back with another sundae recipe before the month was over! And this one also has fruit in it. As much as I love indulgent, rich, sundaes loaded with chocolate, I just cannot overlook the incredible produce available at this time of year!

Today’s sundae is all about the peaches. Peaches are at their peak right now. Have you been buying them up as much as I am? I am shocked at their incredible flavor – I haven’t had a bad one yet! And with my sweets cravings in full-force right now, peaches are a better option than cake, for sure.

Grilling peaches is a great way to bring out even more of the natural sugars in the fruit. Plus, it makes for an easy dessert option when you have guests over and don’t feel like turning the oven on.

Which brings us to today’s creation – Grilled Peach Sundaes! These sundaes are just what your summer needs and they are so simple to throw together. But before we get to the recipe, check them out!

So what exactly do we have going on in these sundaes? Let’s break it down:

  1. Grilled peaches (duh!)
  2. Cinnamon butter
  3. Vanilla bean ice cream
  4. Homemade Cinnamon Granola – instead of buying my own granola, I thought I’d make some, especially since I had lots of nuts sitting in the pantry, begging to be used

First let’s get to the grilled peaches. These are the easiest part of the sundae, for sure. All you need to do it grill over medium heat until they get warmed through and tender. But the key is to not touch them as they grill – this will produce some killer grill marks!

After the peaches are done grilling, we finish them off with some cinnamon butter for an extra kick.

Next, the peaches get topped with vanilla bean ice cream. Easy enough, right? I didn’t make this ice cream from scratch because, why should I? This dessert is all about the peaches so I didn’t feel the need to get crazy with my own homemade ice cream.

I did, however, make my own granola to top the sundaes. I really wanted a crunchy texture in this sundae so it would compliment the tender peaches and soft ice cream. And with oats and nuts easily available in my pantry, granola was the easy choice!

If you’ve never made your own granola, it really is incredibly easy. You just toss the oats and nuts in a sweet glaze made from honey, cinnamon, oil, and spices and then bake until crunchy. You’ll wonder why you haven’t made this sooner!

As always, I have a couple tips to make sure these sundaes come out perfectly:

  1. To keep the peaches from sticking to the grill, don’t forget to brush the grill and the cut side of the peaches with oil.
  2. Make sure you let the granola cook long enough – it’s better to have crunchy granola than raw granola.

And that’s all there is to it! Once you’ve made these sundaes, you’ll want to grill all your fruit. Pineapple is also a great fruit for grilling! Maybe I’ll try that next…

Grilled Peach Sundae

Fresh peaches are grilled and served with cinnamon butter, vanilla bean ice cream, and homemade cinnamon granola

Servings: 8 sundaes

Ingredients

For the sundaes:
  • 4 large peaches halved
  • 1 quart vanilla bean ice cream
  • cinnamon butter (recipe below)
  • cinnamon granola (recipe below)
  • canola or vegetable oil for grilling
For the cinnamon butter:
  • 1/2 stick butter salted, softened
  • 1/2 tablespoon + 1 teaspoon granulated sugar
  • 1/4 teaspoon ground cinnamon
For the cinnamon granola:
  • 2 cups old-fashioned oats not instant!
  • 1/2 cup sliced almonds
  • 1/2 cup chopped pecans
  • 3 tablespoons canola oil
  • 1/8 teaspoon salt
  • 1/4 cup honey
  • 1/2 tablespoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract

Instructions

For the granola:
  • If using the homemade granola, you'll want to start that first to give it time to cook. Preheat oven to 300 degrees.
  • Add nuts and oats to a large bowl. In a separate small bowl, add the oil, salt, honey, cinnamon, and vanilla extract and whisk together. Pour mixture into bowl with oats and nuts. Stir together until well-mixed.
  • Pour granola onto large baking sheet and spread evenly into one layer. Bake 12 minutes and remove. Stir mixture and return to oven for another 12-15 minutes, until the mixture is golden brown. Remove from oven to cool.
For the cinnamon butter:
  • Add ingredients together in a small bowl and mixture together with a spoon. Set aside while we grill the peaches.
For the sundaes:
  • Preheat grill (or grill pan) to medium heat. When the grill is really hot, brush grill and the cut-side of the peaches with oil so they do not stick. Place cut-side down onto grill. Cook until the tops of the peaches become tender and warm to the touch, about 7-10 minutes. To ensure great grill marks, do not disturb the peaches.
  • Once peaches are cooked, remove from grill and arrange cut-side up. Spoon cinnamon butter into the center of each one. Place each half into a bowl and scoop 1/2 cup vanilla ice cream over each half. Top with cinnamon granola and serve immediately.

Notes

Grilled peach recipe adapted from High Heels and Grills
Excess granola can be stored in a storage bag once cooled. Best eaten within one week.

    I adore grilled peaches, nectarines and plums. I love serving them with ice cream or even greek yogurt. My other favorite way to enjoy them is in a cobbler. It’s like summer in every bite.
