Buffalo Chicken Sliders – Buffalo chicken nuggets are loaded into soft sweet rolls and topped with homemade blue cheese sauce

I love a great slider. Full-sized burgers and sandwiches feel like a big commitment and since I have no self-control, I tend to over-eat. Sliders help me manage my over-eating better.

These Buffalo Chicken Sliders are my newest obsession. They have all the punch of buffalo chicken but in a little sandwich. And with my homemade blue cheese sauce to go with it, you’re going to love every single bite.

The sliders are made with sweet and savory dinner rolls. They are the perfect texture and size for the chicken nuggets that will go inside them. I use a bottled buffalo sauce that I love – Frank’s Red Hot Buffalo Sauce. But you can certainly use whichever sauce you prefer.

Tips & Tricks

  1. Make sure the chicken is crispy. When cooking the chicken nuggets, make sure you cook until they get pretty crispy. This ensures they don’t get soggy when adding the buffalo sauce.
  2. Bake in a muffin tin. We bake the sliders in a muffin tin to help toast the bottom of the slider. The buns are super soft so we need a good way to toast the buns and this worked great!
  3. Can also serve open-faced. If you don’t want so much bread in these mini sliders, you can serve with just a bun on the bottom. Just make sure to insert a toothpick through the middle to help keep the sandwich together.

Buffalo Chicken Sliders

Ingredients

For the blue cheese sauce:
  • 1/3 cup blue cheese crumbles
  • 2/3 cup mayo
  • 1/4 cup sour cream
  • 2 tablespoons lemon juice fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
For the sliders:
  • 12 savory Hawaiian rolls
  • ½ cup Franks buffalo sauce
  • 12 frozen chicken nuggets
  • blue cheese sauce

Instructions

For the blue cheese sauce:
  • Add all the blue cheese sauce ingredients together into a medium bowl. Using a fork mash up the blue cheese into the other ingredients and then combine together until smooth. Add more salt and pepper, if needed.
For the sliders:
  • Preheat oven to 350 degrees. Spray a 12 muffin pan with nonstick spray. Grab rolls and slice in half horizontally. Place the bottom halves in their own mold of the muffin pan. Set aside.
  • Air fry or bake chicken nuggets according to package instructions. Place cooked nuggets in a large bowl with buffalo sauce. Toss together to coat them. Place one nugget on the bottom half of each roll. Top with the other half of the roll.
  • Bake until the bun is toasted, about 8 minutes. Remove from oven and let cool for 5 minutes. Using a spoon, remove slider from the pan and place onto a serving platter. Remove the top bun and spoon blue cheese sauce over the chicken nugget. Replace the top bun. Serve immediately.
