Chicken Tzatziki Wraps – Oven-roasted Greek chicken is carved and loaded into a flatbread pita with homemade tzatziki sauce, feta cheese, red onion, and tomatoes.
I love love love Greek and Mediterranean food. It’s just so flavorful without being heavy. I have made quite a few dishes inspired by foods from that part of the world and today I have one more for you to add to the mix – Chicken Tzatziki Wraps.
The star of this show is the tzatziki sauce. I could (and have) eat this sauce all on it’s own. Just give me a fork and I’m devouring the stuff. It’s made with Greek yogurt, olive oil, and cucumbers. But the cucumbers are strained to take out as much water as possible. Oh and there is some fresh garlic adding in to really give this sauce it’s bite.
The chicken for these wraps is made by roasting chicken thighs on a large skewer. I love how this method makes the chicken thighs charred, while also retaining their moisture. And I can do it right from my oven without needing a special rotisserie.
Without further ado, here are my Chicken Tzatziki Wraps!
Tips & Tricks
- Remove excess cucumber water. It’s so important squeeze out as much water from the cucumber shreds as possible. If you don’t, the tzatziki sauce will be too runny.
- Feta cheese. I love the texture of freshly-crumbled feta cheese so I always purchase a block of feta and crumble it myself. It’s so much creamier than the crumbles you buy in a tub.
- Fresh dill is best! Though I love the ease of dried herbs, there is no substitute for fresh dill. So please use the fresh stuff for the tzatziki sauce
Chicken Tzatziki Wraps
Ingredients
For the Greek chicken:
- 2 cups plain Greek yogurt
- ½ cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 4 cloves garlic minced
- 2 tablespoons dried oregano
- 2 tablespoons smoked paprika
- 2 teaspoons salt
- 1 teaspoon ground pepper
- 2 pounds skinless chicken thighs
For the tzatziki sauce:
- 1 large cucumber
- 2 cloves garlic minced
- ¼ cup extra virgin olive oil
- 16 ounces strained Greek yogurt
- 1 ½ tablespoons red wine vinegar
- ¼ teaspoon salt
- 1 tablespoon fresh dill chopped
For the wraps:
- 6 soft pitas
- ½ cup feta cheese crumbles
- ½ cup diced tomatoes
- ¼ sliced red onion
- roasted Greek chicken (recipe above)
- tzaziki sauce (recipe above)
Instructions
For the Greek chicken:
- Add yogurt, olive oil, lemon juice, and spices to a large bowl. Mix together. Add whole chicken thighs and toss to coat. Marinade for 1 hour.
- Once chicken is done marinating, preheat oven to 400 degrees. Place rack at the bottom of the oven. Remove chicken thighs from marinade and scrape off excess yogurt. Arrange on a vertical roasting skewer and place on a baking sheet covered in foil.
- Bake in preheated oven until cooked through and chicken has started charring. Remove from oven and let cool for 10 minutes. Then, using a serrated knife, carve off chicken and place in a medium bowl.
For the tzatziki sauce:
- Grate cucumber so it’s in shreds. Strain to remove water. But to remove EVEN MORE water, place into a cheese cloth or paper towels and squeeze out the water. Set aside
- In a medium bowl, add oil and minced garlic. Whisk quickly to help blend the garlic flavor into the oil. Do this for 1 minute. I used a mini food processor for this but if you don’t have one, whisking violently in a bowl will do.
- Add yogurt, cucumber, and rest of tzatziki ingredients to medium bowl with oil and garlic. Combine with a spoon or spatula. Let it sit in fridge until we prepare the wraps.
For the chicken wraps:
- Take one pita flat bread and arrange about ⅓ cup of cooked chicken. Dollop tzatziki over the top, about 2 tablespoons. Sprinkle red onion, diced tomato and feta cheese over the top. Serve immediately. Repeat with other flatbreads.
