Chopped Strawberry Spinach Salad – Baby spinach is chopped and tossed with chopped cucumbers, toasted walnuts, strawberries, chives, and a homemade honey Dijon vinaigrette.

Strawberry season is upon us! You can tell because the strawberries at the grocery store are bright and beautiful and so flavorful. I’ve been making a strawberry parfait for breakfast most days because I can’t resist getting my strawberry fix first thing in the morning.

Another fun way to enjoy strawberries is in this Chopped Strawberry Spinach Salad. I love a great chopped salad because all the ingredients are chopped into small pieces, making them easy to scoop up into every bite. For this salad, I use a honey Dijon vinaigrette that is so good you’ll want to drink it.

Chopping the salad

The most work you’ll do for this salad is the prepping of the ingredients. All of them are chopped into small pieces and thrown into a large bowl. I like to sprinkle a little salt over the top to bring out the flavor of the ingredients.

The dressing

The salad is dressed in a honey Dijon vinaigrette that you’ll make yourself. It’s made with olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. I add all the ingredients to a little jar, cover, and then shake until the dressing is all combined.

Simply add it to the salad and toss all together.

Tips and Tricks

  1. Same sized pieces. Cut all the ingredients into small pieces to make them easy to scoop up together in each bite.
  2. Taste the dressing. Make sure to give the dressing a taste before adding to the salad, in case you want a little more salt or honey or mustard, etc.
  3. Salt helps. Sometimes a salad can taste bland. Some think the solution is more dressing. But don’t drench the salad just yet. Use a pinch of salt to bring out the flavor in the ingredients. Then, add a little dressing for more flavor.

Chopped Strawberry Spinach Salad

Servings: 4 servings

Ingredients

  • 6 cups baby spinach leaves chopped
  • ½ English cucumber chopped
  • 1 cup chopped strawberries
  • ¼ cup chopped toasted walnuts
  • ¼ cup chopped chives
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 tablespoon Dijon mustard
  • salt and pepper to taste

Instructions

  • Add chopped spinach, cucumbers, strawberries, chives, and toasted walnuts to a large bowl. Add a pinch of salt over the salad and toss together.
  • In a small mason jar, add olive oil, vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Cover and shake until combined. Give the dressing a taste and adjust vinegrette, if needed. Add to salad and toss together.
  • As a side, this salad feeds four small plates. As an entree, this salad is enough for 1. Add on some protein to make it a meal!
