Bananas Foster Ice Cream – Homemade vanilla ice cream is swirled with caramelized bananas with a hint of cinnamon

July is here. Sadly, it’s the last month of summer (for us anyway – school begins the first week of August). Luckily, July is also National Ice Cream Month so we can send the season with a bang!

I will spend this whole month dishing out recipes that celebrate frozen treats. I plan on having sundaes, milkshakes, and plenty of homemade ice cream. So bust out your ice cream machines and get ready for some yummy treats all month long.

The first ice cream of the month is a killer recipe for my Bananas Foster Ice Cream. Bananas foster is brown sugar flambeed bananas served over ice cream. Instead of serving them warm over ice cream, I’m mixing them into my vanilla custard so you can enjoy is straight out of the freezer.

Without further ado, here is my recipe for Banana Foster Ice Cream!

Tips & Tricks

  1. Monitor custard temperature. Do not cook the custard on anything higher than medium heat. This will ensure the mixture does not get too hot, which could force the eggs to curdle. Use a thermometer to ensure you cook just until 170 degrees.
  2. Chill custard. Chill the custard for at least 4 hours before freezing. This ensures the freezing process doesn’t take longer than 20 minutes and produces very small ice crystals.
  3. Small banana pieces. The ensure you get banana in every bite, dice the bananas in small pieces.
  4. Maple syrup instead of rum. Bananas foster is typically made with rum. But I’m making this version alcohol-free by using pure maple syrup instead. It is the best substitute!

Bananas Foster Ice Cream

Servings: 1 quart

Ingredients

  • 1 cup milk whole
  • 2 cups heavy cream
  • ¾ cup sugar
  • ⅛ teaspoon salt
  • 5 large egg yolks
  • 2 teaspoons pure vanilla extract
Bananas foster mix-in:
  • 2 large bananas diced
  • 3 tablespoons butter
  • ⅓ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • 3-4 tablespoons pure maple syrup
  • 2 tablespoons half and half

Instructions

  • Place milk, 1 cup of cream, sugar, and salt in a medium sauce pan. Heat until the mixture is steaming, but not boiling. Remove from heat.
  • Add yolks to a medium bowl and very slowly whisk in warm milk. Transfer mixture back to saucepan and set over medium heat. Stir constantly until mixture thickens slightly and is 170 degrees. Remove from heat immediately so the mixture doesn't scramble.
  • Place remaining heavy cream in a large bowl and place strainer over bowl. Pour thickened yolk mixture through strainer to remove lumps. Stir with cream. Add vanilla extract. Cover with plastic wrap. Chill mixture until completely cold, about 4-6 hours. In the meantime, make your bananas foster mix.
  • Add butter to a large skillet. Once melted, add sugar, cinnamon, and 3 tablespoons of maple syrup. Stir to combine. Bring to a simmer and simmer for 1 minute. Add diced bananas and stir together to combine with sugar mixture. Cook bananas for 3 minutes or until soft. Finished by adding half and half. Using a potato masher, mash the bananas into smaller pieces. If the mixture is too thick, add another tablespoons of maple syrup. The mixture should be thick but still thin enough to slide off a spoon. Cover and refrigerate.
  • Once the vanilla ice cream base is chilled, ice cream base is ready for your machine. Freeze ice cream according to machine instructions.
  • Once mixture is frozen, place half of ice cream in a storage container. Spoon half of the bananas foster mixture over the ice cream. Swirl the layers together Repeat layer of ice cream and the bananas foster mixture. Cover and freeze ice cream until solid, about 8 hours.
