Georgia Peach Salad – Mixed greens are tossed with grilled chicken, fresh Georgia peaches, pecans, goat cheese crumbles, grape tomatoes, and sliced red onions. Serve with my homemade white balsamic vinaigrette.

Peaches are FINALLY in season! They are my favorite fruit and, sadly, I can only enjoy them about 4 months of the year MAX. Even living in Georgia, I can only access them during their peak season which is June – September. But once they’re available, you can find me adding them to all sorts of treats, both sweet and savory.

Today’s recipe is for this Georgia Peach Salad. While peaches are the highlight, I also added another Georgia export – pecans. I love a good toasted pecan. They are crunchy but also slightly tender. And their natural sweetness is unmatched.

To dress this salad, I decided to use the more mild white balsamic vinegar. It’s also got a little sweetness without being as strong as the aged balsamic vinegar. It’s a super simple vinaigrette to make at home so give it a try!

Tips & Tricks

  1. Salt and pepper. The key to a flavorful salad is a sprinkle of salt and pepper. It brings out the flavor of all the veggies.
  2. Canola oil in the dressing. Olive oil can overpower the flavor of the white balsamic vinegar so I like to use a combination of the EVOO and canola oil.
  3. Fresh peaches only! Canned peaches are just not worth eating in a salad. I’ve been served a peach salad with canned peaches once and they are just too mushy and artificially sweet. This salad is made to highlight the bite and natural flavor of peaches so, unfortunately, you can only make this salad when they’re in season.

Georgia Peach Salad

Servings: 1 entree salads

Ingredients

For the white balsamic vinaigrette:
  • 3 tablespoons white balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons canola oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1 pinch ground pepper
For the salad:
  • 3 cups mixed greens
  • 1 grilled chicken breast
  • 1 small peach
  • 2 tablespoons pecan halves toasted
  • ⅛ medium red onion thinly sliced
  • 2 tablespoons crumbled goat cheese
  • 6 grape tomatoes
  • salt and pepper to taste
  • 2 tablespoons homemade white balsamic vinaigrette see recipe above

Instructions

For the white balsamic vinaigrette:
  • Add all vinaigrette ingredients to a mason jar or small bowl. Whisk together. Set aside while we make the salad.
To assemble the salad:
  • Add lettuce to large plate or bowl. Slice grilled chicken and lay in the center of the salad. Halve and slice one half of the peach and lay over the top of the salad. Save the other half for another use.
  • Top salad with sliced onion, toasted pecans, goat cheese, and grape tomatoes. Sprinkle salad with salt and pepper. Toss salad with a couple tablespoons with dressing. Eat immediately.

Apple Pie Sundae – cinnamon crumble ice cream to Apple Pie Sundae – cinnamon crumble ice cream topped with caramelized cinnamon apples, pie crust chips, and caramel sauce to make a fun way to eat your favorite pie! 

You guys, this is apple pie DECONSTRUCTED! All the flavors you love but in sundae form! 

I was inspired by a restaurant dessert but knew I could take it up a few notches! I added crispy pie crust chips and caramel sauce (because apples + caramel = perfection!), and the result is INCREDIBLE!

Pro tip: Use a cast-iron skillet to caramelize the apples – it gives them better color and flavor than a non-stick pan! And cook them just 8-10 minutes so they still have bite and aren't mushy!

Perfect for National Ice Cream Month, summer treats, fall desserts, or anytime you want apple pie without baking a whole pie! 🥧
