Spiced Carrots with Whipped Feta – Organic small carrots are tossed with cumin, paprika and cinnamon and then roasted to perfection. Served on top of lemony whipped feta dip.

Roasted carrots are a delight. In fact, I am of the opinion that most vegetables just taste better after being roasted. That charred goodness that forms around them is unmatched!

When I saw a recipe for these spiced roasted carrots on Instagram, I was immediately drawn to them. I love roasting my carrots but I never thought to add a mixture of smokey spices and sweet honey to them to make them even better. And with the whipped feta dip they are taken to a whole other level!

Here is my version of these Spiced Carrots and Whipped Feta! They’re a great addition to your spring brunches of Easter dinners this month!

Tips & Tricks

  1. Organic Carrots. I love the look of small organic carrots with their little stems on the end. So I kept a little piece on the ends of mine for that organic look.
  2. Don’t overcook the carrots. I like my roasted carrots to still have a bite so they don’t taste mushy. Make sure you test the carrots around the 18 minute mark to see how you like them and determine how much longer they will need to get to the texture and flavor you prefer.
  3. Be careful with the salt. Feta cheese is pretty salty already so you only need a teeny pinch to add a little flavor to the dip. If you don’t like salty things, you may not even need any added salt! Give the dip a taste before adding any salt.

Spiced Carrots with Whipped Feta

Ingredients

For the roasted carrots:
  • 1 pound organic baby carrots with green ends cut but stem remaining
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • fresh chopped parsley for serving
For the whipped feta:
  • 6 ounces feta cheese
  • 2 ounces cream cheese
  • 2 tablespoons lemon juice
  • ⅓ cup olive oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

For the roasted carrots:
  • Preheat the oven to 400 degrees. Add washed and peeled carrots to a large baking sheet. If the carrots are big, you can slice them in half lengthwise. In a separate small bowl, add the olive oil, honey, and spices and whisk together. Pour over the carrots and toss together until fully coated.
  • Place baking sheet with carrots in a preheated over and roasted for 20-25 minutes or until they are slightly tender and charred. Serve with the whipped feta dip on the serving platter or alongside the carrots.
For the whipped feta dip:
  • Prepare the whipped feta cheese spread by placing feta cheese, cream cheese, lemon juice, 1/3 cup olive oil, salt, and pepper in food processor and mix until completely combined. Serve alongside the roasted carrots.

Sweet Potato Gnocchi with Sage Browned Butter – Sweet Potato Gnocchi with Sage Browned Butter – fluffy pillows of sweet potato dumplings tossed in a sage and browned butter sauce for a comforting pasta dish you didn't know you needed! 

This gnocchi was inspired by a dish I had at a local restaurant years ago, you guys! I was skeptical about sweet potato gnocchi with just butter and sage – no cream? no tomato? But MAN, was I wrong! 

The sweet potato gnocchi is even MORE flavorful than the original! It shines on its own with little help from a heavy sauce – that's why it pairs so perfectly with a light toss in sage and browned butter!

Pro tip: Use a potato ricer to break up the sweet potatoes – don't use a food processor or it will make the gnocchi gummy and pasty! The ricer makes it super fluffy!

Perfect for fall dinners, Thanksgiving, date nights, or anytime you want restaurant-quality comfort food at home!
