Healthy Greek Nachos – English cucumbers are sliced and topped with a mixture of tomatoes, Kalamata olives, feta, and Greek dressing.

NFL Playoffs are underway, which means the Super Bowl is coming soon. It’s time to get your recipes out for some snacks and party food! If you’re like me, you’re still looking to be a little healthy after the sugar-filled holidays. That’s why I created a health version of nachos that use a crispy cucumber as the base instead of a tortilla chip.

My Healthy Greek Nachos combine all my favorite flavors of a Greek salad and place it atop a slice of English cucumber. Each bite is crisp, refreshing, and bursting with bold flavors. And they are so simple to make since there is no cooking required.

Without further ado, here are my Healthy Greek Nachos!

Prepping the cucumbers

The cucumbers are sliced on the bias, which just means they are cut diagonally. This ensures you have a lot of surface area to hold lots of toppings. Make sure not to cut them too thin so they still have a firm and crispy bite.

After the cucumbers are cut, they are patted dry to remove excess water. If they’re too wet, they won’t hold the hummus.

Making the topping

The topping of the nachos consists of lots of chopped ingredients. They get chopped pretty fine to ensure they all fit on top of the cucumber slices. The ingredients include:

  • Roma tomatoes
  • Red onion
  • Parsley
  • Kalamata olives
  • Feta cheese

Once all these ingredients are chopped, they get tossed with Greek dressing. You can use any Greek dressing you want for this recipe. I have a favorite, however, that I love to make and keep in the fridge. You should give that a try if you want to make your own.

Assembling the nachos

To assemble the nachos, the cucumbers are spread with a thin layer of hummus. Then, they get topped with chopped vegetables with Greek dressing. Finally, they are sprinkled with a little more crumbled feta.

Tips & Tricks

  1. Do not make these nachos too early before serving. The cucumbers will soften if topped with hummus and left to sit for too long. However, you can prepare all the components ahead of time and assemble at the time of serving.
  2. You can use any one of your favorite Greek salad dressing for this recipe. If you would like to try my favorite one, here is the recipe.
  3. Make sure you pat dry the cucumbers to remove excess moisture. Otherwise, the hummus will slide off.

Healthy Greek Nachos

Ingredients

  • 1 large English cucumber
  • 1 cup diced tomatoes seeded
  • 2 tablespoons diced red onion
  • 1 tablespoon chopped parsley
  • 2 tablespoons chopped kalamata olives
  • 3 tablespoons Greek salad dressing
  • 4 tablespoons crumbled feta cheese divided
  • ⅓ cup hummus

Instructions

  • Slice cucumbers on the bias about ¼-inch thick. Lay cucumbers on paper towels and cover with paper towels. Set aside.
  • Place tomatoes, onion, parsley, olives, and 3 tablespoons of feta in a medium bowl. Add Greek dressing and toss together.
  • Spread about ¼ teaspoon of hummus onto top of a cucumber slice. Top with a ½ -1 tablespoons of the tomato mixture. Repeat with the rest of the cucumber slices. Sprinkle last tablespoon of feta over the top of all the nachos. Serve immediately.
