Grilled Egg & Cheese Sandwich– Creamy scrambled eggs are topped with colby jack cheese and chives and then sandwiched in between two slices of buttery toasted brioche.

I just love a good breakfast sandwich. It’s hearty and comforting and loaded with a bunch of textures. But my newest obsession is an egg and cheese breakfast sandwich. I love egg and cheese on a biscuit, in a burrito, on a bagel – you name it! There’s just something about velvety eggs and gooey cheese that is great enough without any salty bacon or sausage.

For today’s recipe, I take egg & cheese sandwiches to another level. I put those two ingredients in between slices of buttery, toasted brioche and sprinkle them with chives. It gives of grilled cheese vibes, so I call this my Grilled Egg & Cheese Sandwich.

The easiest breakfast sandwich you’ll make

Breakfast sandwiches are great but they can be a hassle to make at home. With a bacon, egg, and cheese biscuit, for example, you need to make bacon, eggs, and biscuits just to compile them in a sandwich. By the time all the components are ready, breakfast is almost over.

For today’s recipe, however, you will have yourself a sandwich in 10 mins or less. First, you melt some butter in a nonstick pan and toast the brioche. Once it’s golden brown on the bottom, the brioche slices are removed.

Next, the eggs are scrambled with a little salt and pepper and placed in a slightly hot pan. The eggs are cooked until medium and then a slice of colby cheese going on top. The eggs are transferred to the toasted brioche and then finished with chives.

Tips & Tricks

  1. Low heat. The most important step in making creamy scrambled eggs is low heat. You want those eggs to cook slowly so they don’t get “shocked” and turn rubbery.
  2. Chives. Do not skip the fresh chives in this sandwich. They really add depth and freshness.

Grilled Egg & Cheese Sandwich

Ingredients

  • 2 tablespoons butter
  • 4 slices brioche bread
  • 6 large eggs
  • 1 pinch salt and ground pepper
  • 2 slices colby jack cheese
  • 1 teaspoon chopped chives more for garnish

Instructions

  • Place nonstick skillet over medium-low heat. Add butter and let it melt. In a medium bowl, add eggs, and a little salt and pepper. Whisk until combined. Set aside. Once the butter is melted add the toast (you may have to do this in two batches, depending on the size of you skillet). Leave bread untouched until the bread turns golden brown on the bottom. Then remove from skillet and set on a serving plate, untoasted side down. Reduce heat in skillet to low.
  • Add eggs to nonstick skillet and leave undisturbed. Once the edge of the eggs starts to cook slightly, gently fold eggs over each other to cook the eggs more and prevent them from browning. Remove from heat right before the eggs finish cooking. Top eggs with slices of colby jack, one slice right next to the other. Cover the eggs until the cheese starts to melt.
  • Split eggs over two slices of brioche. Sprinkle with chives for garnish. Top with another slice of toasted brioche. Serve immediately.

It's light, flavorful, and looks VERY impressive – the soufflé!

In this version, there's a layer of cherry compote at the bottom of each ramekin with almond cake on top. Cherry and almond are so perfect together, guys. This dessert tastes like heaven!

Critical tips for souffle success:

3️⃣ Keep oven CLOSED - Do NOT open the door before it's done or it could fall!
4️⃣ Serve immediately - Straight out of the oven for the prettiest presentation

Fun fact: If you want extra tall soufflés, you can add a paper collar to the inside of the dish before filling it with batter. But I definitely don't think it's necessary!

Okay, story time! Over the holidays, we finally go Okay, story time! Over the holidays, we finally got to visit Gideon's Bakehouse in Orlando, you know, the legendary bakery with the nearly HALF-POUND cookies that everyone raves about? The ones with 2+ hour wait times?

They had a virtual queue going, so we shopped around until it was our turn (thank goodness!). I grabbed a few of their famous cookies, including one that immediately caught my eye: the Banana Bread Chocolate Chip Cookie. 

I'm obsessed with banana and chocolate together, so this was a no-brainer!

And OH MY GOSH. It was even better than I imagined! Not only was it loaded with chocolate and real banana flavor, but it had candied walnuts throughout for this sweet-salty crunch. INCREDIBLE! 

The biggest bummer? You can ONLY get them in Orlando, no online ordering, no shipping. So of course, I decided to recreate them at home! And you guys... I think I got pretty darn close!

What makes these cookies special:
🍌 Real Banana Flavor: Mashed banana (not artificial!) gives them that authentic banana bread taste
🥜 Candied Walnuts: This is KEY—they stay crunchy and add that sweet-salty element
🍫 Double Chocolate: Regular AND large chocolate chips for maximum chocolatey goodness

I used to love cooking, but during busy weeks it f I used to love cooking, but during busy weeks it felt like a chore. I was too exhausted after work to make anything fun. But with all that time at home, I was able to rethink our favorite foods and make them more achievable for weeknights.

I'd always loved mojo pork (that Cuban citrus-marinated pork that's SO flavorful), but I never made it because traditional pork loin takes FOREVER to roast. But then I had a lightbulb moment: What if I used pork TENDERLOIN instead? 

We eat it all the time because it's lean, quick-cooking, and my husband can grill it in under 30 minutes. Why not marinate it in mojo?

Here's what makes this recipe a weeknight winner:
🍊 The Marinade: Orange juice, lime juice, garlic, cumin, and oregano create that classic Cuban flavor. Just dump everything in a bag and let it work its magic!
⏰ The Timeline: Marinate for 4-24 hours (I usually do overnight), then it's only 25 minutes of active cooking time. Quick sear + oven = done!
🍽️ The Versatility: Serve it with rice and beans, make tacos, top a salad, use for Cuban sandwiches, or meal prep it for the week!

Three critical tips:
-DRY the pork after marinating: This is SO important! Pat it completely dry before searing or you'll steam it instead of getting a beautiful crust
-Use a meat thermometer: Pull it at 145°F for perfectly juicy pork every time. No guessing, no cutting it open repeatedly
-Don't over-marinate: 24 hours max or the texture gets mushy!

This has become one of our absolute go-to meals. It tastes like you spent hours in the kitchen but it's secretly SO easy!
