It’s been the coldest weather we’ve experienced all winter long, which I’ve actually enjoyed. I finally got to whip out my scarves, hats, and gloves. But I’m ready to go back to our spring weather. Can’t wait to see you again, 70 degrees!

For today’s recipe I want to share another one of my favorite snack recipes. If you’re a frequent reader of the blog, you know how much I love to snack. On any given weeknight, you can catch me snacking on food for dinner instead of whipping up a huge meal.

And let’s not forget the afternoon snack…I cannot go much time between lunch and dinner before craving a little bite of something delicious, and usually something sweet. I love to make a batch of cookies or truffles or other small treats on the weekend so I can have them for an afternoon snack throughout the week. I don’t want to ruin my day by eating a huge piece of cake or something heavy like that. Therefore, I always opt for a small, bite-sized treat for afternoon snacks.

When I saw these new Cinnamon PEBBLES™ during my trip to Walmart, I was inspired to make a new snack. One of the first things that come to mind when I think of cinnamon and sugar are churros. You know, those fried pieces of dough that are tossed in cinnamon sugar? So I channeled those flavors for my next snack. Say hello to Churro Marshmallow Bites!

If you’ve ever had a churro before, you know that they’re super crispy yet chewy at the same time. That’s exactly the texture I was looking for in these bites but without all the hassle of making a dough and deep frying it. I discovered that, when you combine the crispy Cinnamon PEBBLES™ with the chewy marshmallow, you get almost the exact texture of a churro. And it takes about half the amount of effort. Perfect!

The small size of the crispy Cinnamon PEBBLES™ is ideal for these bites because they are so easy to chew and won’t make you work hard when you’re chewing like some bulky cereals would. Plus, you can get the perfect bite-size shape when the cereal is nice and small like these little PEBBLES™ are.

Making these bites is so simple and requires few tools and ingredients. And there’s no baking required! Isn’t it great when you can keep that oven off for once?! You also get your hands a little messy so I think it’s a fun snack to make with the kids or your spouse or friends.

To make these bites, you simply melt the marshmallows with some butter until it’s slick and smooth. Then, add in the Cinnamon PEBBLES™ and stir until completely combined. From there, you form little bite-sized balls. I find that using a cookie scoop for this part is super helpful. But feel free to dig right in with your hands if you’re feeling adventurous!

After we’ve formed the bites, this is when it gets ultra-decadent. I mixed some cinnamon into melted white chocolate and then dipped each bite into the white chocolate and coated them evenly. You haven’t lived if you haven’t tried cinnamon and white chocolate together. White chocolate can be a little too sweet for me, at times. But the warm, spicy cinnamon mellows out that sweetness and makes it just right. Yes and yes.

Before you get started on these delicious churro marshmallow bites, here are a few tips to make sure they come out perfectly:

  1. Make sure you’re always watching the marshmallows when you are heating them on the stove. The marshmallows take some time to melt so I know it can be tempting to do other things while it does its thing. But don’t! Sugar can burn really quickly and easily so don’t take your eyes off of the mixture while it’s on the stove.
  2. When it’s time to form the cereal mixture into bites, I recommend this two-step process: (1) scoop the bites onto a baking sheet and let them sit for 3-5 minutes (2) go back and form the mixture into a perfect ball. The cereal mixture is super sticky at the beginning so you will have a big mess if you try to form them into a ball right off the bat. If you let the little portions set for a couple minutes, you’ll have a much easier time. Trust me.
  3. For the white chocolate coating, make sure you are using melting chocolate and not chocolate chips. Melting chocolate sets up hard again once it’s cooled so it’s perfect for snacks like these that are kept at room temperature. I had no issues finding the melting chocolate in the baking aisle at Walmart, but if you can’t find it, you can also use vanilla flavored candy coating.
  4. Speaking of the chocolate, if you find that it’s getting tacky and hard to work with when you’re nearing the end, that means that it’s starting to harden. All you need to do is pop it in the microwave for 10-15 seconds to melt it again.

That’s all there is to it guys! You’re going to love this new treat. Make sure to pack a few with your lunches during the week so you can enjoy for your afternoon snack.

Churro Marshmallow Bites

A chewy, bite-sized snack made with Cinnamon PEBBLES™ and melted marshmallows, which are then formed into little round bites that are dipped in a cinnamon white chocolate coating. It's the perfect snack for your afternoon cravings! #CerealShakeup #CerealAnytime

Servings: 3 dozen bites

Ingredients

  • 6 tablespoons butter unsalted
  • 16 ounces mini-marshmallows
  • 6 cups Cinnamon PEBBLES™ cereal
  • 12 ounces white melting chocolate (they usually come in wafers or disks)
  • 1 1/2 teaspoons ground cinnamon

Instructions

  • Grease two large baking sheets. Set aside. In a large saucepan, heat butter on medium until it's completely melted. Add marshmallows and reduce heat to medium low. Stir until they are completely melted, about 5-7 minutes.
  • Remove from heat and immediately add cereal. Stir vigorously to help the cereal and marshmallow mixture combine. Once combined, spoon mixture onto a greased baking sheet in 1 tablespoon-sized portions. Let them sit for 3-5 minutes until slightly set.
  • Roll each portion into a ball. But be careful not to pack tightly or else they will be tough to eat. Let them set completely for about 30 minutes.
  • Melt white chocolate in a medium bowl in 30-second increments in the microwave. Once completely melted, add 1 1/2 teaspoons of ground cinnamon and stir together. Dip each ball into the melted chocolate to completely coat them. Shake off extra chocolate. Set back on baking sheet to set for 15 minutes.

I used to love cooking, but during busy weeks it f I used to love cooking, but during busy weeks it felt like a chore. I was too exhausted after work to make anything fun. But with all that time at home, I was able to rethink our favorite foods and make them more achievable for weeknights.

I'd always loved mojo pork (that Cuban citrus-marinated pork that's SO flavorful), but I never made it because traditional pork loin takes FOREVER to roast. But then I had a lightbulb moment: What if I used pork TENDERLOIN instead? 

We eat it all the time because it's lean, quick-cooking, and my husband can grill it in under 30 minutes. Why not marinate it in mojo?

Here's what makes this recipe a weeknight winner:
🍊 The Marinade: Orange juice, lime juice, garlic, cumin, and oregano create that classic Cuban flavor. Just dump everything in a bag and let it work its magic!
⏰ The Timeline: Marinate for 4-24 hours (I usually do overnight), then it's only 25 minutes of active cooking time. Quick sear + oven = done!
🍽️ The Versatility: Serve it with rice and beans, make tacos, top a salad, use for Cuban sandwiches, or meal prep it for the week!

Three critical tips:
-DRY the pork after marinating: This is SO important! Pat it completely dry before searing or you'll steam it instead of getting a beautiful crust
-Use a meat thermometer: Pull it at 145°F for perfectly juicy pork every time. No guessing, no cutting it open repeatedly
-Don't over-marinate: 24 hours max or the texture gets mushy!

This has become one of our absolute go-to meals. It tastes like you spent hours in the kitchen but it's secretly SO easy!

Can we talk about how guava and cream cheese is TH Can we talk about how guava and cream cheese is THE most underrated flavor combination ever?! 

Growing up, guava was always around. My dad would spread it on toast with butter every morning, and I did the same. But it wasn't until I had guava with cream cheese at a Latin bakery in Florida that I truly appreciated this tropical fruit. 

The cream cheese perfectly balances the tangy guava jelly and makes everything ultra creamy. Wrapped in flaky puff pastry? KILLER.

I know this pastry braid looks super fancy and complicated, but here's the secret: IT'S SHOCKINGLY SIMPLE. When I first saw a pastry braid, I was so intimidated by how intricate it looked. It felt almost unattainable without tons of practice. But I'm here to tell you that is absolutely not the case!

Here's the whole process:
1️⃣ Roll out puff pastry and cut slits on the sides
2️⃣ Spread cream cheese and guava down the center
3️⃣ Overlap the side pieces to create the braid
4️⃣ Brush with egg wash and sprinkle with coarse sugar
5️⃣ Bake until deep golden brown

THAT'S IT! The braiding technique is so much easier than it looks, and the result is absolutely stunning.

Two critical tips:
-Keep it COLD before baking: Cold puff pastry = steam when it hits the hot oven = flaky layers! If the butter is too warm, it won't puff properly.
-Bake until DEEP golden brown: Not just golden, but DEEP golden. This ensures crispy, flaky pastry that's cooked all the way through. Nobody wants soggy pastry!

This is perfect for brunch, dessert, or honestly just because you want something that looks impressive but is secretly easy to make. You can also substitute any fruit preserves if you can't find guava!

Well, guess what? You can make them YOURSELF! And they're shockingly simple!

I'm talking about those perfectly crispy-on-the-outside, melt-in-your-mouth-on-the-inside shortbread cookies that are basically edible butter. And honestly? 

I don't think they should be reserved just for the holidays. These cookies deserve to be eaten ALL YEAR LONG!

Here's what makes them so special:
-The Recipe: Only FIVE ingredients—butter, flour, sugar, eggs, and vanilla. That's it! If you can cream butter and sugar together, you can make these.
-The Texture: They're like shortbread cookies but slightly softer, so when you bite into them, they literally melt in your mouth. It's pure butter heaven.
-The Secret: Use European-style butter! It has a higher fat content which makes these cookies extra creamy and flavorful. It's worth the upgrade, I promise!

Important tips:
Be VERY careful measuring your flour—too much and the dough will be impossible to pipe
Use a LARGE star tip (not a small one!) or you won't be able to squeeze the dough out
These actually taste BETTER after they cool! The crispiness is what makes them so good, so resist eating them warm (I know it's hard!)

These are perfect for coffee breaks, gift-giving, parties, or honestly just because you deserve a good cookie. You can make them in under an hour from start to finish!

So I set my sights on something that doesn't get nearly enough love in the dessert world: SWEET POTATOES! 

And here's my controversial opinion: Sweet potato beats pumpkin ANY DAY OF THE WEEK. There, I said it! 

These Sweet Potato Cupcakes are super moist, perfectly spiced, and topped with the creamiest cinnamon cream cheese frosting. 

They taste similar to pumpkin cupcakes (so if you're a die-hard pumpkin lover, you can absolutely swap in pumpkin puree!), but here's why sweet potato wins:

✨ The flavor is 100x better (fight me on this!)
✨ That perfect balance between sweet and earthy

But what I'm MOST proud of is how the frosting and cake work together. You know how sometimes you get a cupcake with frosting that's way too sweet so you just eat the cake? Or killer frosting but blah cake so you only eat the frosting? NOT THIS CUPCAKE. 

The spiced cake needs a little sweetness to balance it out, and the tart cream cheese frosting is PERFECT. They're soulmates! 

Important tips:
-Don't undercook them or they'll sink in the center (but more frosting fixes everything!)
-Fill the liners 3/4 full—not all the way—to get exactly 12 cupcakes
-Use a 2M Wilton tip for that fancy frosting swirl (or just spread with a knife!)

Y'all, I need to talk about these Kentucky Derby C Y'all, I need to talk about these Kentucky Derby Cookie Bars because they might just be the most decadent thing I've ever created!

So here's the deal: I love taking traditional recipes and giving them a major upgrade. 

Traditional Derby Pie is delicious, but I wanted to make something even MORE special. And these bars? They're Derby Pie on steroids!

Here's what makes them absolutely incredible:
The Cookie Crust: Instead of regular pie crust, we're using a thick chocolate chip cookie base. Game. Changer.
The Filling: Loaded with pecans, chocolate chips, and a hint of bourbon that adds this rich, complex flavor. The filling is more dense and cakey than traditional Derby Pie, which gives you the perfect chewy texture.
The Bourbon Caramel: This homemade bourbon caramel sauce is what takes these bars over the top. It's sweet, buttery, and has that gorgeous bourbon depth. And yes, the alcohol cooks out, so it's safe for everyone (even made these while I was pregnant!)!

Important tips:
Don't chop your pecans too finely—leave nice chunks for better texture
If the bars start browning too quickly, just cover them with foil while the center finishes baking
Don't over-thicken the caramel sauce on the stove—it will thicken as it cools!

These bars are perfect for Derby Day (obviously!), but honestly, they're amazing for any summer gathering, BBQ, or potluck.
