Pretzel Bites and Beer Cheese Dip – The perfect snack for your party and tailgate needs. You won’t be able to resist these soft & chewy pretzel bites and creamy beer cheese dip.

Pretzel bite being dipped into beer cheeseThe last few days have been glorious, ya’ll. I’m on vacation all week with no plans at all. So all I’ve been doing is blogging, coloring in my adult coloring book (if you haven’t heard, adult coloring is the new thing for relieving stress), and binge-watching TV. I haven’t left the house in 2 days! See, I told you it’s been glorious!

Work has been so busy for the last few months so I need these lazy days for sure. But now my husband is off work, too, so I know he’s going to be stir crazy after doing nothing for 4 hours. Sadly, the lazy day may be cut short today.

In these few days of laziness, I’ve been making some on my favorite treats to share with ya’ll. Today, I am featuring pretzel bites and beer cheese dip. I love making this for game days because, well, beer and cheese and carbs. Do I really need to go on???

With all the gamedays coming up (college bowl games, pro-football playoffs, and let’s not forget my favorite “gamedays” of them all…award shows!!!), you’re gonna have ample opportunity to make these babies.

The pretzels are so crispy on the outside and chewy on the inside. That’s due to the water bath we give them before baking. If you’ve made bagels before, it’s the same concept. If you’ve never made pretzels or bagels before, don’t worry – I’ll walk you through each step in the recipe below.

And let’s not forget that beer cheese – the flavor is on POINT! I love the hint of beer that you get with every bite. And the texture is so perfect, too. Have you ever made cheese dip and it gets hard whenever the cheese cools?? Not this dip. The texture is smooth and creamy no matter the temperature.

This dip is also great to serve with some veggies, if you want some variety. I like carrots, celery, and red pepper since they add the perfect flavors and colors. Oh and these pita chips will be PERFECT too.

Here are some more tips I think you’ll find helpful when making this fun snack:

  1. Make sure to use warm water for the pretzel dough, not hot water. If the water is too hot, the yeast will die and will never activate. You’ll know that it’s dead because the yeast won’t be foamy 10 minutes after the water and sugar have been added.
  2. If the dough is too sticky after you’ve added the flour, keep adding more flour, 1 tablespoon at a time, until it’s manageable. I want it to be easy to knead by hand, but if it’s too sticky, that’ll be impossible.
  3. To give the pretzels their beautiful color and shine, you have to boil them before baking. Traditionally, they are boiled in a water bath with baking soda and brown sugar. When adding the baking soda, make sure to add slowly because the reaction of the water and baking soda could cause it to overflow.
  4. When making the beer cheese dip, make sure you keep stirring the cheese while it’s over medium heat. Otherwise, it will burn on the bottom. Once the cheese is on lower heat, you don’t have to stir as often.
  5. As I’ve mentioned before, you must shred your own cheese. It will melt 1,000x easier and have much better flavor. Shredded cheese has additives to keep it from clumping in packaging. These same additives keep the cheese from melting together. It will obviously still melt but you may have some separation.
  6. If you want to keep the cheese dip hot while serving, you can serve in a fondue pot or mini slow cooker (like this one).

I hope ya’ll love this snack as much as I do! What other snacks do you love to serve during gamedays and tailgates? Let me know if the comments below.

Here are all the kitchen tools and serveware that I used in this post. For each item that is sold, I receive a small commission. Thank you for supporting the brands that support CPA!

Pretzel Bites and Beer Cheese Dip

The perfect snack for your entertaining and tailgate needs. You won't be able to resist these soft pretzel bites and beer cheese dip.
Prep Time40 minutes mins
Cook Time30 minutes mins
Total Time1 hour hr 11 minutes mins
Servings: 8 people

Ingredients

For the pretzel bites:
  • 1 cup warm water
  • 1 package active dry yeast
  • 1 tablespoon sugar
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 cup baking soda
  • 1 tablespoon dark brown sugar
  • 1 large egg
  • coarse sea salt or pretzel salt
  • veggies for serving - carrots, celery, peppers (optional)
For the beer cheese dip:
  • 1 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 10 ounces extra sharp cheddar cheese shredded
  • 1 cup amber beer
  • 2 tablespoons cornstarch mixed with 2 tablespoons of water
  • salt and pepper (for seasoning)

Instructions

For the pretzel bites:
  • Add warm water to bowl of stand mixer. Sprinkle yeast and sugar over the water and gently combine together. Let mixture sit for 10 minutes until it's foaming. If there is no foam, that means the yeast is dead. This could be due to the water being too hot or the yeast being expired.
  • Add flour and salt to mixture and stir with a dough hook until it forms a ball. If it is too sticky to the touch, add more flour, about 1 tablespoon at a time, until it is manageable. Once manageable, remove dough from bowl and place on floured surface.
  • Begin to knead by hand for 5 minutes until the dough is soft. You can also do this in the stand mixer but I like kneading by hand so I can tell when the texture is right. When finished, place ball of dough in a large, greased bowl. Cover with damp paper towel and let rise for about an hour, or until doubled in size. Make sure to place in a warm, draft-free spot. I like to place my dough in the microwave.
  • While the dough is rising you can prep the cheese dip. If you haven't shredded your cheese yet, do it now. Then jump down to the cheese instructions.
  • Once the dough has risen, punch dough down with your fist. Turn out dough onto floured surface. Cut dough into 8 even wedges. Take one wedge and begin rolling into a log. Gradually increase the length of the log until it's about 12 inches long. Cut log into about 10 pieces. Set pieces aside or on floured sheet pan. Roll and cut remaining wedges.
  • Prepare water bath for the pretzels. Place 8 cups of waters into a large sauce pan and heat to high. Once water is boiling, add brown sugar and, carefully, add baking soda. Stir to help the sugar and soda dissolve. Once dissolved, reduce heat to medium. Preheat oven to 450 degrees.
  • Gently add pretzel bites to water. Add as many that will fit without crowding the pan. Boil for 30 seconds and then flip to other side to boil for another 30 seconds. Remove bites and place on baking sheet.
  • When all bites are done boiling, beat egg with 2 teaspoons of water. Brush mixture over each pretzel. Sprinkle each pretzel with a little coarse sea salt. Bake in preheated oven for 12-15 minutes until golden brown. Let cool for 5 minutes before serving. Serve with beer cheese dip and veggies.
For the beer cheese dip:
  • In medium saucepan, whisk eggs, evaporated milk, Dijon mustard, Worcestershire sauce, and half of shredded cheese. Place on medium heat until it begins to warm up. Add amber beer and cornstarch mixture. Whisk quickly until completely incorporated and cheese has melted.
  • While whisking, slowly add remaining cheese. Keep whisking until it has melted completely. Cook sauce until it thickens, about 10 more minutes. Place on low heat until ready to serve.

I’m so sorry to hear this. I wonder if you used a dark baking sheet? When I used dark baking sheets, my baked goods would burn on the bottom before the rest of the item was fully-cooked. To adjust, I reduced my oven temperature by 25 degrees and the burning stopped! You can also buy aluminum baking sheets, which help with even heat distribution (this is what I sue now). In addition to the type of bakeware you use, take a look at the oven racks and where they are positioned. If they are too close to the bottom, you may burn the bottoms of whatever is on the baking sheet. For this reason, I like to bake everything in the center position. Hope that helps!

Can this be made the night ahead of time? Or how well does it do reheated?

The cheese reheats very well but the pretzels will get soggy if the salt is on them overnight. Therefore I don’t recommend making them the night before.

SO that’s tricky…the salt on the pretzel will eventually get absorb after a day so it will make the pretzel bites look lumpy on the surface. I think you best bet is making the dough ahead of time, cut the bites, and then freeze until you need them. Then just boil them and bake, as directed. Let me know how they turn out!

Asparagus Risotto – creamy, cheesy homemade riso Asparagus Risotto – creamy, cheesy homemade risotto loaded with crispy bright green asparagus! The perfect fancy-yet-simple spring side dish that tastes like it came straight from a fancy restaurant! 🌿

Risotto was one of the first "fancy" dishes I learned to make, you guys! I watched so much Giada De Laurentiis on Everyday Italian growing up, and she always made risotto seem intimidating yet achievable!

So I decided to try it about 10 years ago for Mother's Day (or maybe Easter? – it was so long ago!) and made a mushroom risotto that turned out INCREDIBLE!

Mushroom risotto is still one of my favorite variations, but asparagus is the PERFECT spring twist! The bright green color and fresh taste pairs so beautifully with that creamy, cheesy risotto!

Pro tip: The key to amazing risotto is patience! Add the broth just 2 ladles at a time and stir constantly. This slow process is what creates that luxurious, creamy texture!

Perfect for spring dinners, Easter, Mother's Day, or anytime you want an elegant yet simple dish that will impress everyone at the table! 🍽️

Strawberry Cheesecake Milkshake – vanilla ice cr Strawberry Cheesecake Milkshake – vanilla ice cream blended with real strawberries, actual cheesecake chunks, and topped with whipped cream, graham cracker crumbs, and a fresh strawberry! 🍓

I am very picky about my milkshakes, you guys! They HAVE to be (1) thick, (2) full of flavor, and (3) loaded with texture! This milkshake checks all the boxes!

This one was inspired by my husband's obsession with the Strawberry Cheesequake Blizzard from Dairy Queen!

He LOVES it, so I decided to recreate it at home – but better! Instead of using strawberry ice cream and cream cheese, I used REAL strawberries and a real slice of cheesecake for that authentic chunky texture!

The key to making this milkshake so thick? I only use ½ cup of milk! The juice from the fresh strawberries helps liquefy the ice cream, so you don't need much liquid at all!
Pro tip: Make sure you're using the BEST vanilla ice cream you can find! Since this recipe is so simple, the quality of the ingredients really makes all the difference!

Perfect for summer treats, date nights, hot days, or anytime you want a decadent, fruity dessert in a glass! 🥤

Watermelon Basil Lemonade – homemade lemonade sw Watermelon Basil Lemonade – homemade lemonade sweetened with basil sugar and fresh watermelon juice for a complex, refreshing summer drink!

I love making my lemonade from scratch, you guys! It gives me the freedom to experiment with unique flavors like this watermelon basil combo! I've used watermelon in drinks before (hello, Watermelon Sangria and Watermelon Margaritas!), so I knew it would be PERFECT with lemonade!

Watermelon is such a major symbol of summer, so pairing it with fresh basil takes it to another level! The basil adds an herbaceous, complex flavor that regular lemonade could never achieve!

This is one of those drinks that looks impressive but is incredibly simple to make – just 10 minutes of prep time and you've got something that tastes like it came straight from a summer garden!

Pro tip: Don't skip the salt! With a drink as sweet and sour as this lemonade, a little salt balances it all out and prevents it from being overly cloying!
Perfect for summer BBQs, entertaining guests, hot days, or anytime you want a refreshingly unique drink!

Fluffernutter Sandwich Three Ways – marshmallow Fluffernutter Sandwich Three Ways – marshmallow creme and peanut butter come together to make the ultimate sweet sandwich using three unique peanut butter flavors: Mighty Maple, Cinnamon Raisin Swirl, and Dark Chocolate Dreams!

Peanut butter is probably my favorite dessert flavor, you guys! I mean, I have posted THREE different peanut butter cookie recipes in the past year, and that's not even including my PB&J Ice Cream Sandwiches! If this is what addiction looks like, please don't make me control it! 😍

It's my go-to dessert when I have the biggest sweet tooth but no cake or ice cream or candy around! I almost always have the ingredients on hand for a fluffernutter, so I never have to suffer "sweet pains" for too long!

Instead of making a plain fluffernutter, I decided to test three unique peanut butter flavors from Peanut Butter & Co! And I was shocked by the results! Dark Chocolate Dreams (my first love!) trumped the Cinnamon Raisin Swirl! There's something about how the Dark Chocolate Dreams melts into the marshmallow creme that makes me melt after each bite!

Pro tip: Cook on medium-low temp so the peanut butter has time to melt before the bread gets toasty! The melty peanut butter is the BEST part!

Perfect for when you need a quick dessert fix, a sweet treat, or anytime your sweet tooth takes over!

Schnitzel Sub Sandwich – crispy fried chicken te Schnitzel Sub Sandwich – crispy fried chicken tenders topped with fresh baby arugula, a squeeze of lemon juice, and shaved Parmesan cheese in a soft hoagie bun!

I tried this sandwich at a restaurant and fell so deeply in love that I HAD to recreate it at home, you guys! It was so SIMPLE yet so INCREDIBLE! 😍

The best part? It tastes fresh and light despite being a fried piece of chicken! The secret is all in the fresh toppings – the baby arugula, bright lemon juice, and shaved Parmesan cut through the richness of the fried chicken perfectly!

The biggest step is pounding and frying the chicken tenders, but don't worry – I use a shallow pool of oil instead of deep frying, which makes it SO much simpler at home! Just flatten the chicken evenly so it cooks through and gets super crispy!

Pro tip: Make sure to use the lemon! Fried food can taste rich and heavy, and the lemon juice is exactly what the chicken needs to lighten it up and add freshness!
Perfect for lunch, dinner, weeknight meals, or anytime you want a gourmet sandwich at home! 🥪
