Valentine’s Day may be behind us but that doesn’t mean I have to lay off the chocolate recipes. No sir. In fact, I’m doubling tripling down on the chocolate this week and bringing you a cookie with three kinds of chocolate – cocoa powder, melted chocolate, and large chocolate chips.

Today’s recipe celebrates all the things I love about cookies and all the things I love about brownies, all in one recipe. Chewy edges, gooey centers, and crunchy walnuts. I love everything about this recipe. Especially the chocolate.

What are brownie cookies?

Brownie cookies are just that – brownies in the shape of a cookie. These should not be confused with “brookies”, which are a dessert that are half brownie dough and half cookie dough and baked together as one.

These cookies are slightly chewy around the edges and soft in the middle, just like a brownie edge. The walnuts gives these cookies a sophisticated touch and also help mellow out the rich chocolate. But don’t get it twisted – you’ll still need a whole glass of milk to enjoy with these cookies.

How to make these cookies

This cookie recipe is not much different than a class chocolate chip cookie recipe. It starts by creaming butter and sugar together until light and fluffy. Then, the eggs and vanilla extract are blended in.

Here’s where things start to change a bit. Melted chocolate is added to the batter. This recipe uses cocoa powder and melted chocolate to achieve just the perfect chocolate flavor. We can’t add too much cocoa powder or else the cookies will be too dry. So the melted chocolate helps add an extra punch, while keeping the texture perfect moist.

The dry ingredients are then whisked together and added to the batter. Here’s when the dough gets super thick. If you have a stand mixer, you’ll be happy to have it for this step.

Finally the walnuts and chocolate chips are added. I wanted to use big chunks of chocolate but got lazy and didn’t want to chop chocolate up. Instead, I bought giant chocolate chips, which are 2x the size of normal chips. They add the perfect amount of chocolate and still stand out in the cookies alongside the chunks of walnut.

Tips & Tricks

  1. Make sure to cool the melted chocolate before adding to the dough mixture or else it may scramble the eggs.
  2. Once the dough is formed it will be really thick. It make be hard to mix in the walnuts and chocolate chips. If so, just knead them in by hand.

Walnut Brownie Cookies

Ingredients

  • 8 ounces semi-sweet chocolate chopped
  • 1 cup all-purposed flour
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 tablespoons butter unsalted, softened
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ⅔ cup chopped walnuts
  • ⅔ cup semi-sweet chocolate chunks or large chips

Instructions

  • Preheat oven to 350 degrees. Prepare two baking sheets by lining with parchment paper or silicone mats. Set aside. Melt the chocolate in the microwave in 30-second increments until glossy, smooth, and melted. Set aside to cool. Whisk together the flour, cocoa powder, baking powder, and salt together until combined. Set aside.
  • In a bowl of a stand mixer, beat butter and sugars together until fluffy and light, about 3 minutes. Add eggs, one at a time and beat together. Add vanilla and cooled chocolate and beat just until combined. Add in all the dry ingredients and gently pulse the dough until it starts to come together. Beat for 5 more seconds. Add in walnuts and chocolate chunks. beat for 5 seconds until mixed throughout.
  • Take 1 tablespoon of dough and roll in a dough with your palms. Place on baking sheet. Repeat with the rest of dough, spacing the cookies about 1.5 inches apart. They will not spread much while baking. You can flatten them out a little if you want the baked cookies to be less round.
  • Bake in preheated oven for 13-15 minutes, or until the edges begin to crack and reach the centers. Remove from the oven and cool for 10 minutes before serving.

    Al hail walnuts! I feel like they’re often overlooked and under appreciated. One of the best cookies I’ve ever had was a walnut chocolate chip cookie in Palm Springs. I think it’s a happy coincidence that I have all the ingredients on hand right now to make these! Yum!!

Biscotti is the dessert I never knew I needed. I discovered them in college when I craved a snack while studying for finals. I bought a biscotti at the library coffee shop and dunked it in my coffee. The cookie that I thought was too crunchy suddenly turn soft and chewy. Yum!

Those memories inspired me to make my own biscotti. First, I made these gingerbread biscotti. And then I made this pistachio version. Now, I’m recreating the biscotti I first had many years ago – Double Chocolate Biscotti.

Once again, The Great British Baking Show has led me to a new treat I'd never heard of but was completely entranced by! Devonshire split buns are a popular British treat made with soft baked buns filled with cream and jam, and honestly? I'm obsessed! 

What I love about these buns is how they feel like eating a sweet sandwich – imagine a jam sandwich but in a long bun with whipped cream! Doesn't that make you drool?

The great news is they're super easy to make! With a simple enriched dough recipe and store-bought jam, you can have these buns ready in just a couple of hours! The dough took me some time to develop because I wanted them soft like hot dog buns (but obviously sweeter!), not dense and heavy!

Pro tip: DO NOT slice all the way through! Leave the bottom connected so the buns hold the filling well! Use piping bags with tips to fill neatly – it makes them look bakery-quality!

Perfect for breakfast, dessert, holiday gatherings, brunch, or anytime you want a soft, indulgent treat!

This particular crostini was born when I had leftover fig preserves to use up! And let me tell you – this combination is INCREDIBLE! Every single bite is perfectly balanced – crispy, tangy, sweet, spicy, and creamy all at once! My guests absolutely cannot stop at just one!

The magic is in the rosemary honey goat cheese spread – that's where all the flavor comes from! The fresh rosemary pairs SO beautifully with the sweet fig preserves!
Pro tip: Do NOT assemble these until you're ready to serve! 

The bread will get soggy if you make them ahead! BUT you can toast the bread and make the goat cheese spread ahead of time for quick assembly!

Perfect for holiday parties, entertaining guests, or anytime you need an impressive appetizer that's seriously easy to make! 🎉
