Best Recipes of 2016

round-up
December 27, 2016

Man, what a year! 2016 sure has been a memorable one, that’s for sure. As you remember, I started this blog back up again in July 2016. And it’s been one of my best decisions all year. Food is such a passion of mine and I am so blessed to have a means to share that passion with you all.

In the past year, I’ve shared many of my favorite recipes with you all: sweets, soups, drinks, entrees – each one more indulgent than the last. Now, I want to share the recipes that you all have loved the most and some of my favorites, too.

Best recipes of 2016 photo collageWithout further ado, let’s get started!

Most Popular Drink Recipe – Cranberry Lime Mojitos

cranberry lime mojitos with a cranberry spear

These mojitos have been so popular with you guys. Is it the bright, festive colors? The delicious, refreshing flavors? Or maybe the simplicity of the recipe? Who knows! I just know that you guys have been making these like crazy ever since I posted the recipe earlier this month. I don’t blame you – I’ve made them five times in the last couple months and showing no signs of slowing down. Cheers to that!

Most Popular Breakfast Recipe – Bananas Foster French Toast Casserole

Piece of bananas foster french toast casserole on a plate

There is no shortage of breakfast recipes on the blog, that’s for sure. The most popular one, by far, has been this bananas foster french toast casserole. Though it was posted in early November, you have been making it the most during the holidays this month. Same here! I made it on Christmas morning and it was a huge hit. So glad you are loving it as much as I do! Maybe I’ll post some more breakfast casseroles soon? We shall see.

Most Popular Cookie Recipe – Reese’s Pieces Peanut Butter Cookies

reese's pieces peanut butter cookies with Reese's pieces scattered around them

Cookies, cookies, cookies. I just can’t get enough cookies! But there is one that stands above the rest: Reese’s Pieces Peanut Butter Cookies. These cookies are as chewy as they are visually stunning. So I can’t say I’m surprised when I realized these were the most viewed cookies on the blog. If it’s the peanut butter you love, you’re gonna be obsessed with this peanut butter hot chocolate.

Most Popular Savory Dish – Creamy Baked Mac & Cheese

Casserole dish of creamy baked mac and cheese

Ya’ll cannot get enough of these cheesy dish. And how could you?! This mac and cheese combines three kinds of cheese with the amazing cavatappi pasta (also called corkscrew pasta). The pasta has little ridges that perfect grips the creamy sauce so you get a perfectly cheesy bite every time. Yummm. If you haven’t made this yet, what the heck are you waiting for?!

Most Popular Recipe – Overall

Spoonful of simple classic chili

The popularity of this one was a little surprising, if I’m being honest. The recipe is super simple – no bells and whistles. Just your average chili recipe. That’s actually what compelled me to write this recipe. I struggled to find a normal, simple, chili recipe on Pinterest. So once I figured it out, I had to share. So maybe that’s why you all have responded so well to it. It is the most viewed recipe on the site by almost 10,000! I definitely heard you and plan to make some more simple, easy recipes throughout 2017, too.

My Husband’s Favorite – Apple Pie Cinnamon Rolls

Pan of apple pie cinnamon rolls

I asked my husband what recipes he loved the most from the past year. He thought it was a trap so he said they were all his favorite. Haha! My husband, folks. Such a smartie. After some coercing, I finally got it out of him: he loooooved the apple pie cinnamon rolls that I made this summer. Hands down. I loved them, too, so I could definitely understand his choice. Imagine a combination of cinnamon apples, gooey filling, and chewy, soft cinnamon roll dough. How could you turn that down?! I’m actually planning to make them again today for my brother-in-law. It’s what he wanted for Christmas this year. I can respect that!

Most Surprising Recipe – Turkey Noodle Soup

Dipping bread into turkey noodle soup

When I set out to make this turkey noodle soup, I just wanted to use leftover turkey from Thanksgiving. But when I tasted the flavors in that broth, I instantly fell head-over-heels for this soup. So creamy and hearty without being heavy and fattening. I was so surprised by how amazing this recipe turned out so I just had to document it and share with you guys. If you don’t have leftover turkey to use, you can easily use leftover chicken. I’ll definitely be making more of this soup throughout the cold nights this winter.

My Favorite Recipe – Molten Chocolate Cake

molten chocolate cake with chocolate filling spilling onto the plate

Last but not least, we have my absolute favorite recipe: molten chocolate cake. I am OBSESSED with this cake. The chocolate flavor is the perfect balance of rich and sweet. I didn’t even need ice cream to accompany it – it’s that good. And the texture….so gooey in the center with a slight crisp around the edges. This is easily the best cake I’ve ever had. EVER. I love that I can have it ready in less than 30 minutes. So whenever I get a craving for something rich and chocolatey, I can whip it up in a flash. Which I’ve done many times this year.

Well, that does it! Those were some of your favorites and a couple of mine. If you haven’t tried any of the above, you gotta check them out. Maybe it can be your 2017 resolution??

2016 is almost a wrap and I hope you’ve achieved what you wanted to for the year. But if not, use this time to make new goals for 2017 and set up your steps for achieving those goals. After all, goals without a plan are just dreams.

I would say “see you in 2017” but I have one more post to share on Thursday before the year ends. So hold on for a couple more days! See you Thursday!

Woah guys, I need to talk to you about these Choco Woah guys, I need to talk to you about these Chocolate Chip Cookie Cake Pops!

So this recipe was inspired by a trip to a well-known coffee shop. They sell some incredible cake pops there, with the birthday cake being my all-time favorite. But on this trip, I decided to give their cookie dough flavor a chance because I am ALL about the cookie dough!

The verdict? Bleh. It was fine, but I kept thinking about ways it could be EVEN better!

My issues with the coffee shop version:
❌ White chocolate coating (poor flavor choice!)
❌ Didn't taste like a cookie at all
❌ Missing that brown sugar goodness

So I took all my observations and developed my PERFECT version of a chocolate chip cookie cake pop! And you guys, these turned out SO much better!

They're perfect for birthday parties, baby showers, bridal showers, or honestly anytime you want a fun treat that tastes way better than the coffee shop version!

Hot chocolate. It's almost a necessity in winter t Hot chocolate. It's almost a necessity in winter time, right?

Last year I made this incredible peanut butter hot chocolate because, you know, I love all things peanut butter. But this year? I wanted to make a hot chocolate with another one of my FAVORITE chocolate combos: Raspberry Hot Chocolate!

And that raspberry, guys…let me tell you. Adding it to the hot chocolate is like drinking one of those chocolate raspberry truffles from a chocolate shop. So rich and slightly tart. The whole drink is so balanced and I love it!

Making hot chocolate from scratch is much much easier than you'd think. And once you do, you'll never buy those packets again! All you do is heat milk in a saucepan and then whisk in cocoa powder and sugar. Boom – that's it!

For this raspberry hot chocolate, there's just one more step: break down fresh raspberries into a puree by cooking them on the stove for a few minutes. Once it's cooked, you just strain out the seeds and add to the hot chocolate and you have yourself a raspberry hot chocolate!

Perfect for Valentine's Day, cozy movie nights, or anytime you want to treat yourself to something special!

These Smothered Pork Chops are an exciting escape These Smothered Pork Chops are an exciting escape from boring dinners, and honestly? They might be my new weeknight obsession!

Oh my goodness, ya'll. Not only does it smell heavenly, but that flavor is unmatched to any gravy I've ever made before. That fresh thyme really sets it off!

What makes these AMAZING:
🔥 ONE PAN recipe - yes, all done on the stove!
🍳 No oven or fancy appliances required
💚 That creamy onion gravy is EVERYTHING
⏰ Ready in 40 minutes total
🥩 Bone-in chops stay SO juicy
👨‍🍳 Simple ingredients, incredible flavor

The process is super easy:
First, you lightly fry the pork chops - and don't worry, it's not a thick batter that would make these super unhealthy. We just coat them in spices and a little flour, then fry in butter and oil to get them slightly crispy.

Then comes the magic! The butter and oil stay in the pan (hello, flavor!), and we cook down the onions, add garlic and fresh thyme, then create this INCREDIBLE creamy gravy with chicken stock and cream. The gravy thickens right before your eyes - it's actually kinda mesmerizing!

Finally, add back the chops, smother them in all that gorgeous gravy, and let them finish cooking. The result? Tender, juicy pork chops swimming in the most flavorful onion gravy you've ever tasted!

This is the kind of meal that makes you feel like you're eating at a fancy restaurant but you made it on a Tuesday night in 40 minutes. Win-win!

I never really liked fudge... until I tried THIS D I never really liked fudge... until I tried THIS Dark Chocolate Raspberry Fudge!

Okay guys, confession time. I used to think fudge was just meh - too sugary, kinda gritty, not chocolatey enough. But then my friend Savannah brought homemade fudge to our Christmas potluck and I ate EIGHT pieces. EIGHT! That's incredible, even for me!

So of course I had to get the recipe and make it my own. Enter: this gorgeous Dark Chocolate Raspberry Fudge! The combo of rich dark chocolate with tart raspberry swirls is absolutely HEAVENLY.

The best part? This is SO much easier than traditional fudge! No candy thermometer needed - just sweetened condensed milk, chocolate chips, and homemade raspberry puree. That's it!

Swipe to see:
→ The dreamy raspberry swirl 😍
→ How creamy and smooth this fudge is
→ That gorgeous color combo
→ Tips for perfect fudge every time

Perfect for Valentine's Day, Galentine's, or honestly just because you deserve something sweet!

This Cranberry Apple Crumble is my absolute favori This Cranberry Apple Crumble is my absolute favorite alternative to apple pie - and here's why you're gonna love it too!

First of all, let's be real... making pie is SUCH a process. Make dough, chill dough, roll out dough, make filling, create pretty top crust, bake. It's just too much, especially during the holidays! And don't even get me started on that first slice that NEVER comes out pretty. I usually keep it for myself to save the embarrassment 😅

But THIS? This is SO much easier! It's the same balance of fruit and carbs you crave in a pie but with like half the effort. Plus it's scoopable, so no messy slicing! Hallelujah!

The cranberries pair SO beautifully with the apples - I've been embracing cranberries a lot more this year and I'm so glad I did! The tart berries balance perfectly with the sweet apples and that buttery crumble topping.

A few tips that will help you:
1️⃣ Slice the apples, don't dice them - better apple to cranberry ratio
2️⃣ Fresh or frozen cranberries work! DO NOT use dried
3️⃣ Let the crumb mixture chill for at least 10 minutes so it hardens up
4️⃣ Granny Smith apples hold their texture perfectly when baked

This crumble is warm, comforting, and absolutely irresistible. The only thing that can make it better is that generous scoop of vanilla ice cream melting on top! 🤤
Perfect for Thanksgiving, Christmas, or honestly any time you want something delicious without all the pie stress!
