Banana Bread Sundae – Warm banana bread is topped with butter pecan ice cream and caramelized bananas to make for a sundae to rule all sundaes!

We’re 3 weeks into National Ice Cream Month and I finally have a super simple recipe for you that doesn’t require you to make your own ice cream, yet it celebrates ice cream just as much. It’s a recipe for a KILLER sundae made with two store-bought components and one homemade one. That means you can enjoy it in under 30 minutes!

This sundae is called my Banana Bread Sundae and it’s made with – you guessed it – banana bread. But not only that! It’s topped with butter pecan ice cream and homemade caramelized bananas that take the banana bread to rich, flavortown.

Before we talk anymore about the recipe, here are some more photos to make you drool:

How to make this sundae

As I mentioned above, there are three major components to this sundae:

  1. Banana bread
  2. Butter pecan ice cream
  3. Caramelized bananas

While I’m sure many of you love making things from scratch, there’s really no need to do so for this recipe. The real highlight of this sundae is the combination of flavors that come together once the sundae is assembled. The sundae will probably taste a hint better with homemade banana bread or a homemade butter pecan ice cream, but you gotta weigh whether that extra flavor is worth the extra effort. The choice is yours.

For me, the utility I get when enjoying this sundae in a timely manner outweighs what I would get if I made all the components from scratch. Now, of course, if I happened to have fresh, homemade banana bread laying around, I would definitely use it. But I wouldn’t spend an hour and a half making it just to use it in this sundae. The same goes for homemade butter pecan ice cream.

Homemade caramelized bananas

Although the banana bread and butter pecan ice cream can most certainly be storebought, there is one component of this sundae that you’ll need to make yourself – the caramelized bananas. But don’t worry – they’re super simple to make and only take about 10 minutes.

To make the bananas, first, a buttery brown sugar sauce is made in a skillet. Then, the bananas are added to soften them up a little bit. Once they’re done, the sauce is ready!

Once the bananas are ready, it’s time to assemble the sundae. To do this, first the banana bread is warmed up. I like to do this in a skillet with a little butter to make the bread warm and slightly toasted on the outside.

Next, the warm banana bread is topped with butter pecan ice cream and finished with the caramelized bananas. I add on a few pecans for garnish and then – voila! The sundae is ready!

Tips & Tricks

  1. To make the caramelized banana syrup smooth, it needs to cook long enough to break down the brown sugar and remove the grittiness. Make sure it cooks for at least 3 minutes or until translucent.
  2. Make sure you give the bananas a few minutes to cool down before adding to sauce. This will help the sauce thicken up in a syrup and will also make sure the bananas aren’t wicked hot before you bite into them.

Ingredients

For assembly of the sundae:
  • 1 quart butter pecan ice cream
  • caramelized bananas (see recipe below)
  • 1 9×5 loaf banana bread
  • 1 tablespoon butter
  • pecans for garnish
For the caramelized bananas:
  • 6 tablespoons butter salted
  • 3 large bananas sliced
  • ¾ cup light brown sugar
  • 2 tablespoons maple syrup

Instructions

  • First, make the caramelized bananas. Add butter to a skillet and set heat to medium. Once the butter is melted, add brown sugar and maple syrup. Stir to combine and continue cooking until mixture is smooth (about 3 minutes).
  • Add bananas to sugar mixture and cook for another minute. Remove from heat. Set aside while we prepare the rest of the sundae.
  • Next, it's time to warm the banana bread. Heat a skillet over medium heat. Add a tablespoon of butter. Slice the banana loaf into 6 even slices. Place 4 slices into skillet and toast for about 1-2 minutes or until the bread has turned golden brown on the edges. Flip and cook for 1-2 more minutes. Remove and repeat with the last 2 slices.
  • Place 1 slice of banana bread on a small plate. Scoop 2 small scoops of butter pecan ice cream over the top of the banana bread. Cover with about 1/4 cup of caramelized bananas. Repeat with 5 remaining slices of banana bread. Serve immediately.

The biggest step is pounding and frying the chicken tenders, but don't worry – I use a shallow pool of oil instead of deep frying, which makes it SO much simpler at home! Just flatten the chicken evenly so it cooks through and gets super crispy!

Pro tip: Make sure to use the lemon! Fried food can taste rich and heavy, and the lemon juice is exactly what the chicken needs to lighten it up and add freshness!
Perfect for lunch, dinner, weeknight meals, or anytime you want a gourmet sandwich at home! 🥪
