Elvis Ice Cream Sundae – Elvis was known for his love of peanut butter, banana, and bacon sandwiches. This sundae takes all those flavors and incorporates them into a sundae perfect for dessert on a hot, summer day!

Say it isn’t so! It’s not like I have school to get back to, or anything. But I still have to deal with all the back-to-school traffic and that is just as upsetting in my book.

To close out National Ice Cream Month, I saved two of the most decadent recipes to share with you guys. The first one is this sundae with the most shocking collection of flavors. Trust me – you’re gonna want to make this ice cream sundae as soon as possible.

Okay, now for the sundae.

Have you ever heard of an Elvis sandwich? It’s a sandwich made with peanut butter, banana, and bacon. It was a favorite of Elvis Presley’s, hence the name. So anytime you see this combination of flavors, it’s called “the Elvis.”

I am a huge fan of this combo and I’ve had it in sweet and savory versions: shakes, burgers, sandwiches, even doughnuts. But today’s invention is in a league all it’s own: The Elvis Ice Cream Sundae!

This sundae is the most incredible sweet & salty treat that I’ve EVER had. The warm bananas melt the ice cream slightly to make a super creamy ice cream base. Then, you add creamy, sweet, and salty peanut butter and finish it off with crunchy bacon. Yummm! Watch out, french fries and milkshake – I found my new sweet and salty obsession!

So how exactly do you build this sundae? You’re gonna be shocked at how easy it is!

First, you gotta caramelize the bananas. I chose to use warm bananas because, in my opinion, a sundae isn’t a sundae without a warm sauce. Because the bananas are caramelized in a brown sugar syrup, it will satisfy the requirement. It’s like having a bananas foster!

Next, I had to decide what ice cream to use as the base. My initial instinct was to use peanut butter ice cream. But all I had available to me was peanut butter ice cream with fudge ripples and peanut butter cups. I gave it a try and it just didn’t taste right – chocolate is not a welcomed flavor in this combo. So I used classic vanilla so it would serve as a supporting flavor of this sundae and not overtake any of the other components.

The next steps are even easier. Simply top the ice cream with bananas and syrup, add whipped cream, drizzle on some peanut butter sauce, and sprinkle on some bacon. Boom! There you have it!

And I say peanut butter sauce, but it’s really just peanut butter melted in the microwave to make it perfectly liquefied. How easy is that?!

Alright kids, before you get started, I just have a couple tips to help you make these sundaes. Here we go!

  1. Make sure you give the bananas a few minutes to cool down before adding to sauce. This will help the sauce thicken up in a syrup and will also make sure the bananas aren’t wicked hot before you bite into them.
  2. Cook your bacon extra crispy. This will make it much easier to chop into crumbles.
  3. Don’t over heat the peanut butter – it will not take more than 15-25 seconds to turn the peanut butter into liquid. If you heat too long, it will most-certainly burn.

Dipping bacon into the Elvis Ice Cream Sundae

Elvis Ice Cream Sundae

Elvis was known for his love of peanut butter, banana, and bacon sandwiches. This sundae takes all those flavors and incorporates them into a sundae perfect for dessert on a hot, summer day!

Servings: 4 sundaes

Ingredients

For assembly of the sundae:
  • 1 quart vanilla ice cream
  • caramelized bananas (see recipe below)
  • 6 strips bacon cooked and crumbled
  • 1/3 cup creamy peanut butter
  • whipped cream
For the caramelized bananas:
  • 6 tablespoons butter salted
  • 3 large bananas sliced
  • 3/4 cup light brown sugar
  • 2 tablespoons maple syrup

Instructions

  • First, make the caramelized bananas. Add butter to a skillet and set heat to medium. Once the butter is melted, add brown sugar and maple syrup. Stir to combine and continue cooking until mixture is smooth (about 2 minutes).
  • Add bananas to sugar mixture and cook for another minute. Remove from heat.
  • Assemble 4 ice cream dishes in a row. Add ice cream to dishes. I like about 3/4 cup of ice cream but you can add up to 1 cup of ice cream per dish. Scoop about 1/4 cup of banana mixture over each ice cream dish. If leftovers, feel free to distribute! Cover the top of sundae with whipped cream.
  • Place peanut butter in small microwavable dish and microwave for 20 seconds, or until melted. Using a spoon, drizzle about a tablespoon of peanut butter over whipped cream. Sprinkle a tablespoon of bacon crumbles over each sundae. Serve with a spoon and enjoy!

They're chewy, chocolatey, minty, have a layer of buttercream, and a nice dollop of fudge on top. I decided 4 words were the max I could use when naming them so I settled on mint chocolate fudge cookies!

Mint cookies have long been a love of mine, whether it's a thin mint or mint cookie ice cream. I love the duo of chocolate and mint together, but it is EVEN better when the chocolate is in the form of a cookie! 

March tends to be the unofficial month of mint because of St. Patrick's Day and the Shamrock Shake at McDonald's making its annual appearance this time of year. So I had to give you a fun, new mint cookie to celebrate these flavors!

The wreath isn't hard to assemble at all! You just make the little pigs in a blanket like you normally do - using crescent dough and mini hot dogs - but just arrange them in a ring and bake. Simple as that! I added a little poppy seeds to step up the presentation a little. But if you have picky little eaters, you can leave them off!

About that dipping sauce... When serving the wreath, don't forget the dipping sauce! I love honey mustard with my hot dogs so that's what I wanted to serve with this wreath. But not just any honey mustard. No, no. This is a Dr Pepper honey mustard, guys! I make a killer Dr Pepper mustard glaze for my Thanksgiving ham so I know first-hand how well Dr Pepper pairs with the mustard flavors!

But they finish with a hint of salty cornbread taste. And with the drizzle of honey on top, there is no mistaking that similarity to cornbread!
