Roasted Pear Baked Brie – Bartlett pears are roasted with fresh thyme, walnuts, balsamic vinegar, olive oil, and honey and then placed atop a warm, baked brie.

As we approach the holiday season, it’s time to revamp your typical appetizer recipes. You may have a go-to cheese recipe that you love to share with your family and friends. Well, get ready to push that recipe to the side and try something new!

This Roasted Pear Baked Brie is a sweet and savory treat that is perfect for serving for any dinner party this season. Place it alongside some grapes, crackers, and nuts and you have yourself a gorgeous cheese platter.

Roasting the pears

The first step in making this appetizer is roasting the pears. It’s a simple process that takes less than 20 minutes.

First, the pears are quartered and cored and placed in a roasting dish. A mixture of balsamic vinegar, olive oil, honey, Dijon mustard, chopped thyme leaves, salt, and pepper is whisked together. Then, half of it is spooned over the pears. The pears are placed in the oven and baked for 8 minutes.

The pears are removed from the oven and get spooned with the rest of the sauce. Walnuts are also added. Finally, the pears go back in the oven and finish baking for about 7 minutes.

Arranging the brie

Before we add the pears to the top of the brie, we need to get that brie nice and hot. It’s baked in a 350-degree oven for about 15 minutes to heat it through, making that center nice and gooey.

Once baked, the brie gets transferred to the serving platter. Top the brie with as many pears, walnuts, and roasting sauce that will fit and arrange the rest around the brie. Serve with crackers and other cheese platter accoutrement, such as dried apricots, nuts, grapes, strawberries, etc.

Tips and Tricks

  1. The roasted pears won’t all fit on top of the baked brie. But you can arrange them around the brie so that they can still be enjoyed together.
  2. Make sure to bake the brie until it’s super hot and gooey. It will cool down quickly so it’s important for it to get as hot as possible before removing from the oven and placing on the serving platter.
  3. The thyme is a star ingredient here so make sure to use the fresh stuff, not dried.
  4. The ideal pear for this recipe is ripe, yet firm. However, if you only have softer pears, just don’t cook them for as long. Maybe 3 minutes less?
  5. It’s important to bake the brie on a sheet of parchment paper so that it’s easy to transfer from the baking sheet to the serving platter.

Roasted Pear Baked Brie

Ingredients

  • 2 Bartlett pears firm
  • 1½ teaspoons chopped fresh thyme
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 2 tablespoons honey divided
  • ⅓ cup whole walnuts
  • 1 8-ounce whole wheel of brie
  • crackers, grapes, crusty bread for serving

Instructions

  • Preheat oven to 425 degrees. Cut pears into quarters and remove the cores. Place into small baking dish. Add balsamic vinegar, Dijon mustard, salt, pepper, and 1 tablespoon of honey to a small bowl. Spoon about half of the mixture over each pear. Place in preheated oven and cook for 8 minutes.
  • Remove from oven and spoon on the rest of the mixture. Sprinkle with walnuts. Cook for 7 more minutes. Remove pears from oven. Drizzle with remaining tablespoon of honey. Reduce oven temp to 350 degrees.
  • Place parchment paper on a baking sheet. Put wheel of brie in the center of the baking sheet and bake until super soft in the center, about 15 minutes. Remove from oven and very carefully, lift parchment paper of baking sheet and onto serving platter. Top with roasted pears, excess sauce, and walnuts. Serve with crackers, bread, and grapes.

    I love brie cheese but I never tried the baked version. This recipe sounds amazing. So delicious. Pairing fruits with cheese and herbs is so unique. I will make this for Thanksgiving. Can’t wait.

    I love brie en croute, but it’s time consuming to wrap the brie in dough, so I am excited to try this recipe that doesn’t require the dough. I was wondering how you would get the gooey baked brie out of the oven without it falling apart until I read the tips and tricks as well as the actual recipe which mentioned the parchment paper. This is a delicious sounding recipe, and I can’t wait to try it.

Grilling is my FAVORITE, you guys! Those charred grill marks add SO much flavor! This is my grilled twist on the classic fried Bang Bang Shrimp from that upscale seafood restaurant – healthier and just as delicious! 

The sauce is simply mayo + sweet chili sauce + sriracha. SO easy!

Pro tip: Taste your sauce first and add more sriracha if needed – mine was too mild so I kept adding more! And soak those wooden skewers for 30 minutes so they don't catch fire!
