Well, it’s not until Saturday but I’ve been calling this my birthday week so just go with it.

Since my birthday is the weekend before Valentine’s Day, it’s impossible to get everyone together. Therefore, I just thought we’d turn Super Bowl Sunday into my birthday celebration, too. I decorated the kitchen in birthday decorations, while I kept the living room decked out in Falcons colors (yes, I know it was a tough loss and no, I don’t want to talk about it). I decided to leave those birthday decorations up all week so it has become my birthday week. Hooray!

Another set of items that was leftover from the Super Bowl party was a collection of cupcakes that no one touched. Poor cupcakes. This has forced me to eat a cupcake every morning for breakfast. #birthdayweek

To keep the celebrations going this week, I wanted to share what I love to enjoy the most on my birthday: ice cream cake! Or should I say…ice cream pie.

Today’s recipe is for the ultimate brownie ice cream pie. I’m not a huge fan of ice cream cakes because, for me, it seems like the cake is just getting in the way of more ice cream. Am I right or am I right???

Ice cream pie, on the other hand, is ALL ice cream.

The first time I tried ice cream pie was for a family birthday celebration years and years ago. I think it was my older sister’s birthday…My aunt was in charge of buying the cake. She comes in with this little ice cream pie from an ice cream shop. We all burst into laughter for three reasons:

  1. How the heck is this tiny pie going to feed all 10 of us?
  2. What on Earth is an ice cream pie?
  3. And, of course my aunt would be the one to go rogue with the birthday cake

After eating my designated sliver of pie, I was shocked by how much I loved it. I instantly fell head-over-heels in love. Oreo cookie crust, layered with ice cream, caramel, fudge, cookies crumbs, and more caramel sauce on top. I think maybe there were pecans in there, too? But one thing was for certain; no cake whatsoever. It was more amazing than I could have imagined. So gooey, but also crunchy, and creamy. Every bite was pure heaven.

That’s when I knew that ice cream pie was even better than ice cream cake. Frozen cake taste dry and boring to me, especially when it’s in the same bite as ice cream. So let’s just completely take out the cake and serve just ice cream, layered with cookie crumbs and fudge sauce. Pure genius!

Okay, now that you know my history of ice cream pie, it’s time for you to be introduced to my version: the ultimate brownie sundae pie.

I decided to add a little bit of chew to my version of ice cream pie. So I made the “crust” of the pie a delicious, chewy brownie. It doesn’t turn icy when frozen like cake does and I loooove a chewy brownie so this was a must. I added quartered Oreos on top of the warm brownie so they would meld together and form an Oreo-topped brownie crust. Oreos are my second weakness so this was also a must.

Then I topped it with my favorite ice cream, peanut butter cup. If you recall from past posts, I am OBSESSED with chocolate and peanut butter. If you don’t believe me, just look at this hot chocolate or these cookies. And these cookies!  But you can use any ice cream that you love. It wouldn’t be a sundae if you couldn’t pick the ice cream flavor!

Now for the toppings. There are very few things better than hot fudge sauce. So this was a no-brainer. I made my own, via this recipe from Pioneer woman and had it sitting in my fridge already. If you don’t want to do this extra step, you can most-certainly use store-bought hot fudge. Or even caramel sauce, if you like that better!

Finally, I topped the pie with fresh whipped cream and sprinkled with peanuts. And, of course, finished with a cherry.

In case you need some more tips on how to make this amazing ultimate brownie sundae pie, here’s what you need to know:

  1. Super fudgy brownies don’t freeze as well as the cakey brownies. They become somewhat hard to cut through. So I recommend using the recipe I included below. If you must use boxed brownies, make sure to add the extra egg to make them cakier.
  2. As I mention above, any of the ingredients in each layer can be switched to suit you. If you don’t want to top with peanuts, you can use sprinkles or cookie crumbs. If you don’t like fudge, you can switch for caramel sauce or even strawberry sauce. The possibilities are endless!
  3. When adding the sauce, make sure to pour all over the cake instead of trying to spread it on. Once the sauce hits the cold ice cream, it starts to harden so it gets impossible to spread.
  4. Before serving, make sure that you’ve thawed the cake for about 30 minutes so that you can cut slices easily. You can try to cut it sooner, but the slice probably won’t come out clean. You’ve been warned.

The Ultimate Brownie Sundae Pie

Ingredients

For the brownie bottom:
  • 6 ounces semi-sweet chocolate chips
  • .75 ounces unsweetened chocolate
  • 6 ounces butter unsalted, sliced
  • 2 large eggs
  • 1/4 teaspoon vanilla extract
  • 3/4 cups sugar
  • 1/3 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 tablespoon baking powder
  • 1/8 teaspoon salt
  • 12-14 chocolate sandwich cookies roughly chopped
For the other layers:
  • 1.5 quarts ice cream your favorite flavor
  • 2/3 cup hot fudge homemade or store-bought
  • 1 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 preserved cherry
  • 2 tablespoons peanuts chopped

Instructions

For the brownie bottom:
  • Preheat oven to 350 degree. Prepare pie pan by greasing and flouring it. Place butter, chocolate chips, and unsweetened chocolate over double-boiler. Stir until the mixture is completely melted. Remove from heat.
  • In a separate bowl, whisk eggs, 1/4 teaspoon of vanilla, and 3/4 cups of sugar. Add a little of the chocolate mixture to the egg mixture and combine. Add rest of chocolate mixture to incorporate completely.
  • Sift flour, cocoa powder, baking powder, and salt over the chocolate mixture. Slowly fold into chocolate mixture, just until combined. Add to prepare pie pan. Bake for 18-22 minutes until toothpick comes out clean. Remove from oven and immediately layer the chopped chocolate sandwich cookies on top of the brownie and push so that it is slightly in the brownie. Let the brownie cool completely on a wire rack. This might take about an hour.
For the other layers:
  • Remove ice cream from the freezer and let it thaw for about 20-30 minutes so it becomes easier to spread. Do not let it turn to liquid, though.
  • Once the brownie has cooled and the ice cream is softened, spread into an layer over the brownie. Place back in freezer to harden back up for about an hour.
  • Once ice cream is hard again, remove pie from freezer. Warm up the hot fudge according to package instructions. Pour all over the ice cream so that no ice cream is exposed. You may not be able to spread it once it hits the ice cream so make sure to pour all over. Place back in freezer for another 30 minutes.
  • Right before the 30 minutes is up, add cold heavy cream, sugar, and 1/4 teaspoon of vanilla to the bowl of a stand mixer with beater attachment. Beat cream until stiff peaks form.
  • Remove ice cream pie from freezer and top with whipped cream. Smooth the top. Place eight dollops around the edge and 1 in the center. Cover edge dollops with chopped peanuts and place a cherry in the middle. If serving immediately, let it sit out for another 20-30 minutes to thaw a bit. This will make slicing much easier.

Notes

If serving from the freezer, let it thaw for 30-45 minutes so that it is easier to slice.

You guys remember when I made French macarons for the first time and they were a HOT MESS? The tops were cracked and bumpy and looked more like brownies! I was determined to get them right, so I took a macaron baking class in person – and it changed EVERYTHING! 

The trickiest part? Mixing the dry and wet ingredients together. Under mix = too dry and cracked. Over mix = dense and heavy. But now I know exactly what the batter should look like!

Pro tip: Age your egg whites for 24-48 hours before making the meringue – this helps them get to the perfect consistency!
