Christmas Eve is tomorrow! Man, time has flown by. I’ve been so busy promoting my new cookbook that the holidays really snuck up on me. Thankfully, we have a pretty relaxing agenda for the holidays and get to avoid traveling this year.

Another thing that’s making the holidays easy on me is my simple Christmas Eve menu. I’ve got classics on it like prime rib and my favorite corn casserole. I’ve also got a super simple recipe that is loaded with flavor…my Roasted Garlic Mushrooms. Ever since I made these almost a decade ago, I’ve been obsessed with them.

These mushrooms are covered in garlic and cooked with salted butter to ensure every bite tastes incredible. Once they have finished roasting, lemon juice and fresh parsley is sprinkled over the top to brighten up the flavor. But the best part is the collection of juices at the bottom of the pan – perfect for dunking crusty bread to soak it all up. Butter, garlic, mushrooms, AND bread?? I think this checks all the boxes!

How to make these mushrooms

First, the mushroom stems are cut off. Then, you toss the mushrooms with olive oil and minced garlic. Next, the mushrooms are topped with cubes of salted butter. There is no need to melt the butter before roasting because the roasting process will do that for you.

Next, add the mushrooms to a preheated oven and let them roast for about 8 minutes. Pull them out of the oven and toss them to coat in the sauce that’s formed from the melted butter, olive oil, and garlic. This ensures that the mushrooms are infused with all that flavor. Put them back in the oven to finish cooking.

Finally, the mushrooms are finished off with fresh lemon juice and chopped parsley to give them some zing. Yum yum yum!

Tips & Tricks

  1. In order for the mushrooms to cook evenly, cut any large mushrooms in half before adding to the roasting dish.
  2. To clean the mushrooms, wipe with a paper towel. Do NOT rinse them with water. Mushrooms are super absorbent so they will hold all that water and struggle to brown properly while roasting.
  3. Make sure to season the mushrooms AFTER they have cooked. The salted butter will add lots of flavor so you may not need to add much salt. Therefore, it’s best to season after that butter has melted and coated the mushrooms.

Roasted Garlic Mushrooms

Cremini mushrooms are loaded with garlic, olive oil, and butter, roasted until cooked through, and finished off with a squeeze of fresh lemon juice and a sprinkle of fresh parsley
Prep Time10 minutes mins
Cook Time15 minutes mins
Servings: 4 people

Ingredients

  • 1 pound cremini mushrooms
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 3 tablespoons butter salted
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • salt and pepper to taste

Instructions

  • Preheat oven to 450 degrees. Cut stems off mushrooms. If mushrooms are large, cut in half. If not, keep them whole. We love our portabella mushrooms — they have such a rich taste. We put them in about as many different dishes as we can. Using them as a starter or appetizer sounds wonderful. This is definitely a “to make” with our mushrooms.

Some of my favorite memories start with the smell Some of my favorite memories start with the smell of coffee swirling through a chilly morning. This Pumpkin Cream Cold Brew was born from one of those mornings, when I had leftover pumpkin cream and too much cold brew not to pair them together.

This isn’t just a seasonal drink, it’s that edgy, cozy twist you crave when autumn meets caffeine: chilled cold brew topped with airy pumpkin-spiced cream that slowly melts in and mingles with every sip. It’s smooth, spiced, and addictive in the best way.

Would you take yours extra creamy or light and dreamy?

This Roasted Strawberry Bundt Cake starts with macerating strawberries so their juices deepen, roasting them to intensify flavor, then folding them into a tender, buttery bundt cake that’s bursting with berry brightness. Every slice is soft, moist, and dotted with those roasted ruby surprises.

The first time I tasted chocolate raspberry mousse The first time I tasted chocolate raspberry mousse, I was at a small café on a rainy afternoon overseas. A spoonful felt like velvet, silky chocolate dancing with tart raspberry, so light it dissolved in your mouth. That memory haunted me until I made it myself.

This Chocolate Raspberry Mousse is my tribute to that moment. Rich dark chocolate, whipped light as air, with a swirl of bright raspberries cutting through the sweetness. Elegant, indulgent, yet surprisingly approachable.

It’s the kind of dessert that feels special, but doesn’t require hours or dozens of ingredients. Sometimes, the most unforgettable dishes are the simplest.

Would you dig into it plain or top it with fresh raspberries & whipped cream?

It all started on a cozy fall evening. I was cravi It all started on a cozy fall evening. I was craving pie + cheesecake, and I couldn’t decide which to make. So I thought: Why not both?

That’s how these Chocolate Pecan Pie Cheesecake Bars came to be. A buttery pecan pie layer rich with toasted pecans and deep caramel, sandwiched over creamy cheesecake, drizzled with chocolate, all baked into a bar you can slice and serve.

Every bite hits: the nutty crunch, the silky cheesecake center, the chocolate swirl that ties it all together. It’s indulgence without the fuss of flipping pies or cutting perfect slices.

One rainy Saturday morning, I found myself craving One rainy Saturday morning, I found myself craving something savory, warm, and a little comforting. I rummaged through my fridge, spotted leftover ham, and remembered a quiche I’d always meant to try.

So I rolled up my sleeves, caramelized onions until golden, whisked eggs and cream, and folded in those ham cubes, and that’s how these Mini Ham & Cheese Quiches with Caramelized Onions were born.

Now, these bite-sized savory pastries are my favorite brunch hack. Flaky crust, sweet onion richness, melty cheese, and just the right amount of ham in every bite. They feel fancy but are totally doable anytime.
