Blackberry Vanilla Ice Cream – Homemade vanilla ice cream is given a fruity addition of fresh blackberries.

Happy belated National Ice Cream Day! The celebration was yesterday but that doesn’t mean today should have any less ice cream. I mean, it’s National Ice Cream Month, after all, so that means you can have ice cream every day right?!

For today’s recipe, I have a fruity treat, but it’s not a sorbet. Nope, instead, I am adding fresh blackberries to a vanilla custard base to make it rich but also refreshing.

This recipe for my Blackberry Vanilla Ice Cream simply takes my vanilla custard base and adds a thickened blackberry mixture made from fresh blackberries and sugar. But make sure to strain out those seeds before adding in the blackberry mixture to prevent any unwanted crunch.

Without further ado, here is my Blackberry Vanilla Ice Cream!

Tips & Tricks

  1. Blend blackberries carefully. Since the blackberries will be hot, they will release steam. That steam can force the lid off the blender if you don’t leave a little vent during the blending process. My blender lid comes with a removeable vent so I just take that off before I blend the blackberries.
  2. Monitor custard temperature. Do not cook the custard on anything higher than medium heat. This will ensure the mixture does not get too hot, which could force the eggs to curdle. Use a thermometer to ensure you cook just until 170 degrees.
  3. Chill custard. Chill the custard for at least 4 hours before freezing. This ensures the freezing process doesn’t take longer than 20 minutes and produces very small ice crystals.
  4. Whisk before freezing. After the custard has chilled but before you freeze in the ice cream machine, make sure to give the mixture a whisk to ensure all the blackberry juice is blended into the custard.

Blackberry Vanilla Ice Cream

Servings: 1 quart

Ingredients

  • 1 cup milk whole
  • 2 cups heavy cream
  • ½ cup sugar
  • ⅛ teaspoon salt
  • 4 large egg yolks
  • 2 teaspoons pure vanilla extract
Blackberry mix-in:
  • 2 cups blackberries
  • ¼ cup sugar

Instructions

  • Add blackberries and ¼ cup of sugar in a small sauce pan. Cook over medium heat until the juices release and it thickens up, about 8 minutes. Remove from heat and blend (carefully!) until smooth. Strain out the seeds and set aside.
  • Place milk, 1 cup of cream, sugar, and salt in a medium sauce pan. Heat until the mixture is steaming, but not boiling. Remove from heat.
  • Add yolks to a medium bowl and very slowly whisk in warm milk. Transfer mixture back to saucepan and set over medium heat. Stir constantly until mixture thickens slightly and is 170 degrees. Remove from heat immediately so the mixture doesn't scramble. Stir in the blackberry puree.
  • Place remaining heavy cream in a large bowl and place strainer over bowl. Pour thickened yolk mixture through strainer to remove lumps. Stir with cream. Add vanilla extract. Cover with plastic wrap. Chill mixture until completely cold, about 4-6 hours.
  • Once the ice cream base is chilled, it is ready for your machine. Stir the mixture to ensure all the blackberry puree is combined and then freeze ice cream according to machine instructions.
  • Once mixture is frozen, place ice cream in a storage container. Cover and freeze ice cream until solid, about 8 hours.

    Seriously good!!! I had a bunch of fresh blackberries from the farmers market, googled this recipe and made it yesterday. Wow! It is the best ice cream recipe I have ever tried. Great instructions and just enough sugar but not too much. I have a couple of ice cream recipe books, but this beats anything I have made from the books. Can’t wait to. try some of the others.
