Wasabi Soy Wings – Chicken wings are marinated in a wasabi soy sauce, grilled, and lathered in a sticky wasabi soy glaze

My pregnancy last year brought on some hardcore cravings for all the things I couldn’t have: sushi, beer, and deli meat. For sushi, specifically, the cravings were controllable. I could have cooked sushi, like shrimp tempura rolls or shrimp poke bowls to satifsy them.

But there was one thing that I didn’t have during my pregnancy that I wish I did: wasabi soy almonds. They are these delicious almonds that have a very slight hint of horseradish spice from the wasabi and a little soy flavor. I fell in love with them a few months into breastfeeding because they would fill me up when my appetite felt out of control. They were the perfect treat to eat when I had a craving for sushi flavors but just didn’t have the availability to get any.

I loved these almonds so much that I was determined to use the same flavors in a unique recipe of my own. And so these Wasabi Soy Wings were born!

How to make these wings

Wings are my favorite treat to enjoy on the grill. I love the charred flavor. As such, I decided to make this wing recipe on the grill.

The best way to get tons of flavor on your wings when grilling them is to marinate them beforehand. The marinade I use is the same sauce used on the wings when they’re done, but the sauce hasn’t been reduced yet to make it all thick and sticky.

To make the sauce, you need to first mix wasabi powder with a little water. Then, you add it to the other ingredients: soy sauce, honey, and garlic. Some is used for the marinade and then the rest is placed on the stove to reduce by about half so it can thicken up.

Once the wings are marinated, you simply grill them for 10 minutes on each side and then toss in the thickened sauce. That’s it!

Tips & Tricks

Here are a few tips to help you get this recipe exactly right:

  1. This recipe is for grilling wings. However, you can make these in the oven instead. Just heat the oven to 400 degrees and cook until crispy, which will probably be around 25-30 minutes, Make sure to flip halfway through the cooking time.
  2. Marinating is such an important step so don’t skip it! The marinade caramelizes on the chicken as it grills and gives it so much flavor. If you’re short on time, marinade for just an hour.
  3. You can make these wings ahead of time but don’t toss in the sauce until it’s time to serve. When you let the wings sit with the sauce in the fridge overnight, the wings absorb a lot of it so they aren’t sticky anymore.

This is such a great recipe to enjoy during grilling season. It’s a different way to enjoy grilled wings so it will impress any crowd. I hope you enjoy it!

Wasabi Soy Wings

Servings: 20 wings

Ingredients

  • 2 pounds chicken wings
  • 3/4 cup soy sauce
  • 1 cup honey
  • 3 teaspoons wasabi powder
  • 1 tablespoon water
  • 3 garlic cloves minced
  • sesame seeds for garnish
  • chopped green onions for garnish

Instructions

  • Separate chicken wing flats from drumettes, if they aren't already. Add to a gallon-sized storage bag. Set aside. 
  • In a small bowl, add wasabi powder and water. Whisk together until combined. Add to a medium sauce pan, along with honey, soy sauce, minced garlic. Whisk together. Add 2/3 cup to wings in bag, seal bag, and toss together to coat evenly. Let them marinade for 1 to 4 hours in the refrigerator. Save remaining sauce for later.
  • When the wings are ready, preheat your grill to 350 degrees. Drain wings from marinade and discard marinade. Cook wings for 10 minutes and flip to cook for 10 more minutes. 
  • While wings cook, place leftover sauce on medium heat and bring to a boil and then reduce to a simmer to reduce by half. Remove from heat to cool and thicken. 
  • Once wings are cooked, toss them in reduced sauce and let them sit for 5-10 minutes. Remove from sauce and then sprinkle with sesame seeds and chopped green onions. Serve immediately.

    Love wings and love soy. Haven’t tried wasabi (yet). It is super spicy? Love some spice, but not over-the-top spicy. Will need to give this a try once we get our grill out for the summer. Thanks!
