Peach Cobbler Ice Cream – Cinnamon peach ice cream is loaded with pie crust pieces and swirled together.
It’s peach season, people! And from what I’ve read, peaches are supposedly super juicy and delicious this year from all the rain we had in Georgia. From the batches I’ve gotten so far, I can’t say I disagree!
Peaches are great for making lemonade, adding to a salad, or even topping crostini. But my favorite has to be in dessert. I’ve shared this peach sundae recipe and this cobbler recipe with you guys before, but now I’ve got a mixture of both of those recipes to share with you today.
For today’s ice cream recipe, I’ve got one you’re going to want to make ASAP. It’s for my Peach Cobbler Ice Cream. It’s a creamy peach ice cream base with a hint of cinnamon and pie crust pieces mixed throughout. Yum yum yum. The peaches are even cooked a little to bring out their sweetness just as they are in a cobbler.
Without further ado, let’s admire this gorgeous ice cream, shall we?
How to make peach cobbler ice cream
This ice cream is one of the easiest ones you’ll make. There is no custard base to cook so that saves you a bunch of time. The main steps of this ice cream go like this:
- Cook peaches
- Blend peaches with other ingredients
- Make pie crust pieces
- Freeze mixture in ice cream machine
- Layer ice cream and pie pieces together and freeze
Cooking the peaches really brings out their flavor. Plus, you get that roasted sweetness that you find in a peach cobbler. I added in a little cinnamon to enhance those flavors, as well.
Once the peaches are cooked, they’re just blended with the rest of the ingredients and then chilled before freezing in the ice cream machine
Pie crust pieces
The pie crust pieces are the ingredient in this ice cream that takes it from a peach ice cream to a peach cobbler ice cream. Well, that and the cinnamon. But don’t worry – you don’t need to make pie dough from scratch to make them.
A great shortcut for making pie pieces is to use storebought refrigerated pie dough. All you do is roll is out, brush with egg wash, and then sprinkle with cinnamon sugar. The dough is then cut into squares and baked until golden brown.
Layering the ice cream
Once the two components of the ice cream are made, it’s time to layer them together to make the peach cobbler ice cream. We do this instead of mixing them together so that we don’t handle the ice cream too much and cause it to melt.
Once layered together, cover with plastic wrap and freeze until solid.
Tips & Tricks
- No need to peel the peaches, unless you really want to. Since the peaches will be blended, that firm skin will be chopped up into smaller pieces and you’ll never know they’re there. Also, the red color of the skin will add a pretty color to the ice cream.
- You must use heavy cream for this recipe to ensure the ice cream is creamy. Do not substitute with half and half or milk.
- Before adding the ice cream base to an ice cream machine, it has to be cold or else it will take forever to freeze and cause ice crystals to form during the prolonged process, which will not produce a super creamy ice cream. Make sure to chill for at least 4 hours before adding to the ice cream machine.
Peach Cobbler Ice Cream
Ingredients
For the cinnamon peach ice cream:
- 1½ pounds peaches
- ¼ cup water
- ¾ cup sugar
- ½ cup sour cream
- 1 cup heavy cream
- ¼ teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
For the pie crust pieces:
- 1 disk refrigerated pie dough
- 1 large egg
- 1 teaspoon water
- 3 tablespoons sugar
- 2 teaspoons ground cinnamon
Instructions
For the cinnamon peach ice cream:
- Pit and slice the peaches into large chunks. Place into a large saucepan with the water. Stir together and place over medium heat. Cover and simmer until fruit is soft, about 10 minutes. Remove from heat and add sugar. Stir together and let sit until room temperature.
- Add cooked peach to a pitcher of a blender, along with sour cream, heavy cream, vanilla, and ground cinnamon. Cover and blend until almost smooth but has a few chunks left. Place blender pitcher into fridge to cool it down completely, about 4 hours. In the meantime, make the piece crust pieces.
- Freeze the ice cream according to ice cream machine instructions. Layer in a storage container with crushed pie crust pieces and cover with plastic wrap. Freeze until solid, about 8 hours.
For the pie crust pieces:
- Preheat oven to 350 degrees. Lay a piece of parchment paper onto a large baking sheet. Roll out the pie dough so it's flat. Whisk egg and water together to make an egg wash. Brush lightly over the pie dough. Discard excess wash.
- In a small bowl, combine cinnamon and sugar together. Sprinkle over the pie dough in one even layer. Discard excess sugar. Slice dough into strips and then into small squares. Separate the squares so they are not touching.
- Bake in preheated oven for 10-12 minutes or until the underside begins to turn golden. Remove from oven and break squares into smaller pieces. Measure 1 ½ cups of pie pieces and discard the rest. Use measured pieces in the layering of the cinnamon peach ice cream described above.
