Easy Ham & Cheese Pastry Rolls – Puff pastry is layered with Dijon mustard, ham, and cheddar cheese, rolled and then baked in the oven until perfectly crispy

Fun breakfasts don’t need to be complicated. No dicing vegetables or layering ingredients into a casserole are required for the breakfast I have for you today. It’s a simple breakfast dish that I developed because I had extra puff pastry to use up. And my entire family loved it, especially my 1-year old.

Say hello to my Easy Ham & Cheese Pastry Rolls!

Frozen puff pastry makes everything easier

I just want to take a moment to thank Ina Garten for bringing frozen puff pastry into my life and making it okay for using it in recipes instead of making it from scratch. I was always a “from scratch” person, when it came to baking, but she showed me that good food doesn’t mean you have to slave in the kitchen.

Making these easy pastry rolls

Now that we have that out of the way, we can chat about this recipe. I love having puff pastry around to whip up easy, last-minute desserts or breakfasts. Heck, you can even use it for last-minute appetizers!

This recipe came from some leftover pastry I wanted to use up. I also had ham and cheese on hand, so I simply rolled out the dough to make it flat, spread on some Dijon mustard, and layered on some ham and cheese. Next, all I had to do was roll it into a log and slice into 12 perfect pinwheels.

Baking the rolls

The pinwheels are each place, cut side up, into their own greased muffin tin mold and baked until the pastry puffs up and turns golden brown on top. That’s all there is to it!

Tips & Tricks

  1. Make sure you use thinly sliced ham. Otherwise, the rolls will be too thick and much harder to roll up.
  2. I like using sliced cheese versus shredded cheese because shredded cheese will go all over the place and fall out of the rolls once they’ve been sliced.
  3. To ensure you don’t have raw dough in the center, do not remove the pastry rolls from the oven before the pastry has browned on top.

Easy Ham & Cheese Pastry Rolls

Prep Time15 minutes mins
Cook Time20 minutes mins
Total Time35 minutes mins
Servings: 12 rolls

Ingredients

  • 1 sheet frozen puff pastry thawed
  • 1 tablespoon Dijon mustard
  • 6 ounces thinly sliced ham
  • 6 ounces sliced cheddar cheese

Instructions

  • Preheat oven to 400 degrees. Grease a standard muffin tin with nonstick spray.
  • Unfold pastry dough onto lightly floured surface. Roll with a rolling pin very gently just to iron our creases and create a perfectly flat surface. Spread top of dough with Dijon mustard. Lay thin slices of ham across the puff pastry. Then, top with slices of cheddar cheese.
  • Starting from the slightly longer edge, roll pastry into a log. Cut log into two halves and then cut each half into 6 even pieces. Lay each piece, cut side up, into greased individual muffin tin molds. Bake in preheated oven until pastry is puffed and golden brown, between 18-20 minutes. Let cool for 5 minutes and then serve immediately.

Mango Coconut Sticky Rice – sushi rice cooked wi Mango Coconut Sticky Rice – sushi rice cooked with coconut milk and fresh mango for a tropical side dish! 🥭

This is a SAVORY version of the sweet Thai dessert, you guys! I created this to stay in the savory spectrum so you can serve it with any entree during the week!

The rice cooker does ALL the work! Just add everything, press start, and walk away!

Pro tip: I love the texture of mango as it cooks with the rice, but if you prefer fresh mango chunks, add them after the rice is done!

Perfect for pairing with grilled chicken, fish, tacos, or any Caribbean-inspired meal! 🌴

Peanut Butter Banana Bites – sliced bananas topp Peanut Butter Banana Bites – sliced bananas topped with peanut butter and dipped in chocolate! A yummy, guilt-free treat that's great fresh or frozen!

I was inspired by those frozen chocolate-covered bananas from Disney World, you guys! I added peanut butter because I LOVE peanut butter, banana, and chocolate together!

Once I made these, I discovered I love them better FRESH instead of frozen! The banana flavor is way more present when they're fresh!

Pro tip: Cut your banana slices thick to make them easier to dip in chocolate – thin slices fall apart!

Perfect for satisfying chocolate cravings, healthy snacking, or anytime you want a guilt-free treat!

You guys have LOVED my easy dinner recipes lately, so here's another one! This lasagna cuts prep time in half while keeping all the same flavors and textures you love!

The genius shortcut? Frozen cheese ravioli = no boiling pasta + no mixing ricotta! The ravioli cooks in the oven and the cheese filling acts as the ricotta layer!

Pro tip: Drain the beef well after cooking before adding sauce – otherwise it'll be too greasy!

Perfect for weeknight dinners, family meals, potlucks, or anytime you want lasagna without the fuss!

Easy Homemade Refrigerator Pickles – classic dil Easy Homemade Refrigerator Pickles – classic dill pickles made with garlic and dill that cure right in your fridge! No canning required!

I never thought I'd want to make my own pickles, you guys, but then I tried homemade pickles at a restaurant and was BLOWN AWAY! They were super salty but not as vinegary as store-bought, still super green, and SO crunchy!

The best part? No intimidating canning process! These refrigerator pickles cure in your fridge and are ready in just 2 days!

Pro tip: Cut the ends off your cucumbers first – the ends have enzymes that make them soft during pickling!
