S’mores Sundae – Vanilla ice cream is topped with all the making of classic s’mores – graham cracker pieces, hot fudge, and homemade marshmallow fluff.

National Ice Cream Month just wouldn’t be the same without a new sundae recipe. Sundaes were always my first choice at ice cream shops when I was a kid. I love the combination of flavors and textures: cold ice cream with hot fudge sauce, topped with whipped cream, a cherry, and nuts. What’s not to love about that?!

Now that I am older, I make my sundaes a little more sophisticated. I’ve shared two sundae recipes in the last few years: this apple pie sundae and this Elvis sundae. This month, I’ve got TWO new recipes. The first one is coming at you today: S’mores Sundae.

The inspiration for this sundae came from a sundae I ate way too often in college. It was made with vanilla ice cream, marshmallow fluff, crushed graham crackers, and hot fudge. Today’s recipe is similar but the toasted homemade marshmallow fluff and large chunks of graham crackers take it to a whole other level.

Making this Sundae

This sundae is all about the toppings. Therefore, to make them extra-special, I’ve homemade 2 out of 3 of them: marshmallow fluff and hot fudge. Maybe one day I’ll attempt homemade graham crackers, too. But I just wasn’t up for it this time.

Ingredients

To make the marshmallow fluff from scratch, there are two major steps: whipping egg whites and making sugar syrup. The boiling-hot sugar syrup is thickened and drizzled into the egg whites as they whip to make the glossy, airy marshmallow fluff we all know and love. Also, the hot syrup serves to cook the egg whites so they are safe to eat.

Next comes the hot fudge sauce. I used the same recipe as my peanut butter hot fudge but left out the peanut butter. It’s made by simply heating cream, butter, and corn syrup and then adding chopped pieces of chocolate and mixing together. I let mine cool a little before using so it’s extra thick.

Assembly

Once you’ve got all your toppings made and ready, it’s time to assemble!

First, add a few crumbled graham crackers to the bottom of your dish. Then, add scoops of your favorite vanilla ice cream. Next comes the hot fudge and more graham crackers. Finally, we top with the homemade marshmallow fluff.

Now comes for the final touch: torching the marshmallow fluff. I used my hand torch for this part – there is really no way of getting around needing a torch for this. I heated the fluff until just a little char formed – it only takes a coupe seconds. Do not let the fluff catch fire!

Tips & Tricks

Here are a few tips to ensure this sundae comes out just as it should:

  1. A candy thermometer is absolutely necessary when making the marshmallow fluff. If you don’t monitor the temperature carefully, the candy could start turning into caramel or it may not be thick enough. Cut out the guess work and get yourself a candy thermometer!
  2. Because we are pouring hot sugar into the mixing egg whites, a stand mixer is needed for this recipe. You can use a hand mixer but you will need an extra set of hands to hold the mixer while you pour the hot sugar.
  3. Hot fudge is so easy to make at home so I included the recipe here. But feel free to use store-bought if you’re just not in the mood to make marshmallow fluff AND hot fudge.

S'mores Sundae

Vanilla ice cream is topped with all the making of classic s'mores - graham cracker pieces, hot fudge, and torched homemade marshmallow fluff. 
Servings: 4 sundaes

Ingredients

For the sundaes:
  • 1 quart vanilla ice cream
  • hot fudge sauce see recipe below
  • homemade marshmallow fluff see recipe below
  • 12 graham crackers
For the marshmallow fluff:
  • 1/3 cup water
  • 3/4 cup granulated sugar
  • 3/4 cup corn syrup
  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
For the hot fudge sauce:
  • 1/2 cup heavy cream
  • 3 tablespoons butter salted, sliced
  • 1 tablespoon light corn syrup
  • 1/3 cup granulated sugar
  • 4 ounces semi-sweet chocolate chopped
  • 1/2 teaspoon pure vanilla extract

Instructions

For the hot fudge sauce:
  • Add cream, butter, corn syrup, and sugar into a medium saucepan. Whisk together and place over medium-high heat to boil. Once boiling, cook for 3 more minutes, whisking occasionally to keep it from boiling over.
  • Remove from heat and add chocolate and vanilla extract. Whisk until smooth. Let it cool for 10 minutes to let it thicken. Store leftovers in the fridge for up to 2 weeks.
For the marshmallow fluff:
  • Add water, sugar, and corn syrup to medium sauce pan and turn heat to medium-low. Stir until the sugar has dissolved. 
  • Once sugar has dissolved, raise heat to medium and add candy thermometer. Do not stir any longer or else sugar crystals will form. Let candy boil until it thermometer reads 240 degrees. Remove from heat. 
  • Add egg whites and cream of tartar to a clean bowl fitted for a stand mixer. Attach whisk attachment. Beat egg whites on medium until soft peaks form, about 3-4 minutes. 
  • Turn mixer speed to low. Very carefully, pour heated sugar mixture in a thin, slow stream as the mixer beats it into the egg whites. Once all the sugar mixture is combined with the egg whites, turn up speed to medium high to fluff up the mixture again for about 6-8 minutes. The mixture is done with it's thick, fluffy, and glossy. 
  • Store leftovers at room temperature for up to 2 weeks. The fluff will start to deflate over time. You can whip it back up if you desire. 
For the sundaes:
  • To make the s'mores sundaes, scoop ice cream into 4 large bowls. Crumble 2 graham crackers over each sundae. Swirl hot fudge over the tops of each sundae, about 2 tablespoons. Dollop fresh marshmallow fluff over each sundae. 
  • Using a kitchen blow torch, torch the marshmallow fluff until it begins to brown but not catch fire. Serve immediately.

    This would definitely be a popular dessert in my house! I mean, who wouldn’t love marshmallow, fudge and graham crackers on ice cream? I’ve never made my own fluff but I bet its 100% better than what comes in a jar. This is one delicious treat for a hot summer day.

    Okay, I am not a fan of s’mores and at firt I frowned about the idea of this sundae. BUT then I read “homemade” marshmallow fluff and that’s basically a soft uncooked meringue and I love that! I would definitely enjoy this one, as the hater of s’mores that I am 🙂

3-Ingredient Oreo Truffles 😍 One of my favorit 3-Ingredient Oreo Truffles 😍

One of my favorite go-to recipes! I inherited this from my old roommate back in college. She made them for me once and they suddenly took over my life, you guys! I seriously ate like 10 in one sitting. It was that day that I discovered what heartburn was! 

THE RECIPE (makes 48 truffles):

Ingredients:
-1 package Oreos (36 cookies)
-1 package (12 oz) chocolate chips
-1 package (8 oz) cream cheese

Instructions:
1️⃣ Take cream cheese out of fridge to warm slightly (NOT room temp!)
2️⃣ Crush Oreos into crumbs in food processor. Save 1/4 cup for topping
3️⃣ Mix Oreo crumbs + cream cheese with your HANDS until it forms a dough
4️⃣ Roll into balls using teaspoon or melon baller
5️⃣ Chill 10 minutes
6️⃣ Melt chocolate chips in microwave (30-sec increments)
7️⃣ Dip balls in chocolate, let excess drip off
8️⃣ Sprinkle with reserved Oreo crumbs
9️⃣ Chill 1 hour before serving
🔟 Store in fridge!
